Cucumber, Mango Salad with Cilantro and Lime
To me, salads are often the base for my meals and the element that I put most of my energy into. Once I've picked out a snazzy salad, all I have to do to get dinner on the table is to figure out an easy lean protein. This salad is delicious with grilled or pan seared chicken and it's wonderful with fish. I've even served with with thin slices of grilled or broiled steak.
Shortcut: What do you mean you don't have a V-slicer or madoline yet? Ugh! You can find them for under 30 bucks at Bed, Bath & Beyond. Hurry up and get one already. Slicing cucumbers and fennel into gorgeous ribbons is easy if you have one of these tools but if not, use a very sharp knife and take your time making the skinniest slices you can.
Up The Good Calories: Mix in a variety of garden lettuces, grated carrots or blackberries.
Ingredients:
| 2 | Mangos, peeled, seeded and cut into 1 inch chunks |
| 1 | Cucumber, peeled, seeded and very thinly sliced |
| 1 | medium head fennel, cored and very thinly sliced |
| 1/3 | cup loosely packed, roughly chopped cilantro |
| 1/3 | cup freshly squeezed lime juice |
| 1 | Coarse salt and cracked black pepper |

all ingredients in a large serving bowl. Toss to combine. Taste and adjust
seasonings. Serve immediately. |
