the rest of this week. I'm cooking a BIG pot of Black Bean soup tonight. I'll have plenty leftover to eat during the rest of this week and/or freeze.

I'm also going to cook a pot roast Thursday night when DH is coming home. Remember the segment KD did on the Today Show about 3 recipes made from 1 pot roast? If you don't, here is the link Big Grin:

Anywhoo like I said I will cook a pot roast & some veggies Thursday night. Then over the weekend I can morf the leftover pot roast into other dishes like the ones KD posted recipes for (especially the Roasted Beef and Tomato Sauce). I'm thinking I could even sautee' some onions & peppers to roll up in tortilla shells with some leftover roast OR maybe open faced BBQ sandwiches with cole slaw on the side. (I'll have some raw carrots and onions that I'm not going to use in with the pot roast to shred with the cabbage for slaw).

Also, I purchased a bunch of cilantro for my black bean soup. I'll have some left over to chop and toss in salsa to use on eggs for breakfast. I like salsa on baked potatoes as well and I will have potatoes on hand since I purchased a bag.

Whoo-Hoo!!! Doesn't take much to make me happy...just the thought that I'm cooking up some good and healthy dishes AND I'm not going to have to cook all weekend!!!!!!!!!!!

Hey, I really like this "planning" thing....What a great concept............. Razzer Big Grin Big Grin Wink LOL!!!!!!!!!!

Yes I love the idea of doing one day major cooking and getting 3 different meals out of it. Sometimes I freeze it for later and sometimes I use it through out the week. My son likes beef but I can't have much of it- we eat a lot of chicken. So when I cook a nice size roast I cut 2 steaks out of it. Have pot roast the 1st night then chop the extra veggies and meat for a stew and freeze (adding the meat drippings then thickening it the day I cook it. Meatloaf is another good one to do a larger amount. I do a cake pan. Then cut it up to fit in qt size bags. Thaw and crumble for quick tacos, or casserole dishes, spag. meat sauce. One large pan and cooking then several small quick meals. You can have dinner on the table in a hurry!!!!

I made a pot roast a month or so ago, and made delicious BBQ wrap sandwiches with the leftovers.

I just shredded some of the beef and mixed with my favorite BBQ sauce (Bonesuckin' sauce), and used WW wraps. YUMMY.
