Does anybody have one? Do you like it? Is it possible to make just one pint of ice cream?

Perhaps I will revise Santa's list. Smiler

I can't bring myself to buy full fat ice cream anymore. I just about have a heart attack right there in the freezer aisle from reading the nutrition lables.

Low fat ice cream doesn't come in very many flavors (in the pint size) and we still can't buy half gallons of ice cream because my family of three eats all 8 cups in one weekend. (Actually, I ate 1/2 cup and ds and dh ate the other 7.5 cups. This is a NSV for me... but a lot of calories/sugar for them...)

I was looking in KD's cookbook and on the Cooking Light website and there are a LOT of neat flavors of low fat homemade ice cream out there!!

Thanks! Denise

I made a half recipe green tea ice cream in the funny little half pint ice cream maker. I used a Cooking Light recipe. It is VERY low fat, but came out good. I think that I would use some half and half next time and I would also cut the sugar down to 3 T. (for a half recipe).

GREEN TEA ICE CREAM
1 1/2 cups water
3/4 cup sugar
2 tablespoons loose Chinese gunpowder green tea or green tea (about 3 tea bags)
4 teaspoons fresh lemon juice
1 1/4 cups whole milk

Combine water and sugar in a small saucepan; bring to a boil, stirring until sugar dissolves. Add tea; cover and steep 5 minutes. Strain tea mixture through a fine sieve into a bowl; discard tea leaves. Stir in lemon juice; chill completely.
Stir in milk. Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon the ice cream into a freezer-safe container; cover and freeze 2 hours or until firm.

Yield: 6 servings (serving size: 1/2 cup)

NUTRITION PER SERVING
CALORIES 143(12% from fat); FAT 1.9g(sat 1.1g,mono 0.6g,poly 0.1g); PROTEIN 3g; CHOLESTEROL 7mg; CALCIUM 73mg; SODIUM 28mg; FIBER 0.0g; IRON 0.9mg; CARBOHYDRATE 29.7g

Vegan Eggnog from Bryanna Clark Groggin

2 (10.5 oz) packages of extra firm, silken tofu
2 c. soymilk
2/3 c. sugar (tubinado, white or brown...) or 1/2 c. honey
1/4 t. salt.

1 c. cold water
1 c. rum or brandy or apple juice with flavoring
4.5 t. vanilla extract

20 ice cubes
grated nutmeg

I used to make half a batch and put it all in the blender. We liked it when we were vegans...

A half batch serves 5

We like Silk Nog here. I don't really go for regular Egg Nog so I don't compare Sillk Nog to the regular stuff.
I mix it half and half with milk for dd as part of her breakfast. She thinks it is a great treat!

If you are in the mood for egg nog ice cream, the Edy's brand, which also goes by Dreyers in some areas, makes a good light Egg Nog flavor. I bought some last week, and it's particularly tasty with a bit of nutmeg sprinkled on top.

I don't think that the SilkNog was all that bad, really. It was what it was. My family expected it to taste just like egg nog... and it doesn't. Sort of like expecting a boca burger to taste exactly like meat.

I've got a vegan eggnog recipe that is good as the SilkNog but won't have time to post it until after dinner...

Wow, Denise, that 1 cup ice cream maker sounds great!

A couple of weeks ago I posted a recipe for vegan pumpkin ice cream up in the recipe thread. You might try that one. No one in my house could tell that it was soy.

And I"m glad that you posted about not liking the SilkNog, because I'm looking for some to make some egg nog ice cream. I couldn't find it at Von's last night, so I bought some real (lowfat) eggnog and I'm going to use that in the same recipe that I posted for the pumpkin ice cream, just without the pumpkin, and with a little bit of rum extract instead of the vanilla. If I like the results, I'll post the recipe. It won't be vegan, but it will still be healthier than the standard eggnog ice cream.

Blessings,

Lori

That is me... spreading the news about my vices and converting the world one child at a time!

Thanks you guys for all of the suggestions.

My mil gave me a 1 cup ice cream maker. It is the same brand as the Donvier 1-Quart Ice Cream Maker. It kind of looks like a toy, but works pretty well. I put some Silk Nog (soy milk egg nog) in it. We didn't like the soy nog, too well... so the soy ice cream wasn't GREAT but it did turn into a frosty, icy consistancy.

Think I may try a low fat green tea ice cream recipe in it on Friday... and maybe I will upgrade to a quart size as one cup split 3 ways is a pretty small serving... although talk about your portion control!

My kid has become kind of hard to Xmas shop for... too old for toys and not interested in clothes... (I miss the Brio train days! Smiler)

Maybe I will buy HIM an ice cream maker... He really enjoyed making the soy nog ice cream...

I have an ice cream maker that came with 2 freezer bowls when I bought it at Sam's Club well over a year ago. I Love It!!!
I think it is a Cuisanart (sp). You might check Bed, Bath, and Beyond to see what they have that is similar now.

Denise,
Sounds like you are way ahead of me in the infomation department.
Phish Food? It sounds sort of gross.
I told dd about it--- she wants to try it.

We buy a pint just about every weekend (which is another reason for switching to the low fat).

Our pint choices are:
B&J low fat Phish Food (which is the kind we like best. Other people must like it, too, because it isn't in the groc. store freezer most of the time)
B&J low fat choc brownie (dh and ds don't like chocolate...)
choc sorbet
mango sorbet

dh bought a half gal of low fat mint choc chip last weekend. That is the half gal that they ate in one weekend...

Actually, there are enough pie, cake, cheese cake, cookie and other recipes to keep me busy for the rest of my life... Smiler And dh and ds don't eat an entire pie in a weekend. A pie will last us 3 meals, if I freeze the leftovers.

Mine are both Rival ice cream makers, bought at
WalMart. I think the big one was about $20, the little one about $15.

I have the Cuisinart, and have made as little as one pint of ice cream in it. The other day I posted a recipe for Non-dairy Pumpkin Ice Cream that I made, and it was SOOOOOOO good! Even my soy hating family members couldn't tell that it was made with soy.

Like Bee, I have found that unless you are going to eat it right away, I don't like making lowfat or even sorbets or ices because they end up freezing into ice, and are weird consistency. BUT, if you are only freezing for a couple of hours until after dinner or whatever, they are fine.

I've also made some WONDERFUL frozen yogurts in my Cuisinart. I really love this ice cream maker!

Blessings,

Lori

I don't know if you have a stand mixer, but Kitchen Aid has an ice cream maker attachment (the bowl to make the ice cream fits where the regular bowl would go for mixing) for their stand mixers. I checked real quick, looks like it's a 2-quart (at least for my 5-quart mixer, that is--the smaller mixer might have a smaller ice cream maker).

I have a Cuisinart ice cream machine, and highly recommend it. I have only made full-fat cooked-custard type ice cream with it.

I have a cuisinart ice cream maker. I love it for making fruit sorbets and ices but I've found that the texture/consistency of the low fat ice cream isn't quite right (unless you eat it right away and don't freeze it). I guess that wouldn't be a problem if you are only making 1 pint.

As far as brand reliability, we've had good luck with the motor of our Cusinart but the mixing arm broke. The company did replace it though free of charge.
