Well, it's just about Easter again. DD Fiona is almost 4 this year--just old enough to be all excited about coloring the eggs.
I'm planning to do just a dozen this year. Anyone have any good ideas of what to make with them besides egg salad or devilled eggs (DH won't eat either)? I don't want to be stuck eating them all myself! And I hate throwing them out, especially since I sprang for the organic eggs.

Thanks for that tip Sandy! I am so excited to try that tonight. I told my daughters teacher about it this morning also. Avery is 28 months and she LOVES to help me in the kitchen. She is so excited about dying eggs tonight.

Pam I buy up to 10 egg dye kits around eater and we use them throughout the year for the uncooked eggs. It is a great project and has helped teach Sophia to take care with food, cooking. She loves to color the eggs.
I don't know how healthy these would be considered and a lot of people don't care for them, but I love pickled eggs. My Dad made them when I was a kid and my friend David at the beach makes them now (his taste exactly like my Dad's, which is great).
They are just hard-boiled eggs that have been "marinated" in a mixture of beet juice, sugar and vinegar that has been boiled together to form the marinade. I HATE beets (BLECH!) but love pickled eggs--I know, it makes no sense.
I will be spending Easter weekend with David at the shore and he's already told me he has pickled eggs waiting for me.

Here is an idea from one of those cookbooks at the grocery store aisle (can't remeber wich one).
Slice the hard boiled egg. On a slice of toast, place a slice of cheese, ham or bacon the arrange the egg slices. Pop in the microwave or toaster oven to heat the egg through. Open faced breakfast!!

When my kids were little and we HAD to do the colored egg thing, we had egg salad one day, and then they all went in my food processor and I zapped them on low twice, put them in a baggie and froze them. They stay for about a month that way, long enough for everyone to forget that they don't like them. I used them in salads, on top of fish, in meatloaf, anywhere I use regular chopped eggs...
It's never too late to get it right.

I use them in chicken salad. Also, if I have leftover poached salmon (I usually make enough so that I am sure to have leftovers, ) I make an egg salad and add in the salmon.

I use half plain yogurt, half miracle whip (Not mayo for this one, we like it sweet), lots of yellow mustard and a squirt of dijon. I also add very finely chopped onion and celery (we are talking VERY finely chopped).

I use them in salads, as snacks, etc. Because I have 4 kids, we are doing 16 this year so that each child can decorate 4. What am I going to do with 16 of them? Actually, we all like them for snacks, and everyone by my son likes egg salad, and I'll use them in tuna salad, so they'll get used before they go bad (by the way, I have found that if they don't get eaten in 3-4 days they usually go bad ).

Alli, I know that all the egg dye boxes tell you to boil the eggs. I don't boil them- just color them raw, cold, from the fridge. We've done it for 3 or 4 years and have only had one break. It is fun to crack open the colored ones for baking and quiche.
Last night I saw Martha Steward make an egg white salad that looked good.
