I can't find your post regarding your son's lunches, but I was at Sam's Club this morning and they were ahving out packets of Carnation Instant Breakfast. I thought about you immediately. Wondered if this might be helpful...
Although there is a fair amount of sugar in it and I don't think it makes a decent breakfast, it might be a higher calories supplement stirred into milk.
Each packet has 120 calories and does have a fair amount of vitamins/minerals.
I can't speak to the taste...never had it.

I really like the taste of these, especially the strawberry one and the milk chocolate. I've used them to make smoothies and I believe them to be very filling.
