Next week I'm working in our home office while someone is on vacation. I have this week to plan for meals. I'll be staying in a motel with no kitchen. There is a refrigerator and a microwave at work.

I don't want to spend money or calories eating out 5 days. So....what to do? I have one case of water to take and will get at least one or two more. I'll take some fruit. I can fix my breakfast at the office (it's informal) with my usual crunchy granola, skim milk, and banana. I can cook some pasta servings to freeze on top of the portobello mushroom and tomato sauce I made and froze the other day. I can microwave that for lunch for a 3-4 days. I can bag up 5 servings of mixed greens for a salad.

But what about dinner? The only appliance I have to take is a crockpot. After reading about kd's can can cuisine I've been buying some one serving containers of things like chicken and dumplings and ravioli.

Have ya'll got any ideas?

Thank you to all for your good suggestions. I just made taco soup to take next week. I've posted the recipe on the Recipe Swap. Believe me, a one cup serving is very filling.

Oh, I forgot to add the nutrition info I got from MasterCook for each one cup serving:

264 calories; 13 g fat, 23 g carbs, 6 g fiber, 13 g protein.

This stuff is good! It's one of those that tastes better the second time around. And one that you want to go back for seconds when it's snack time. Freeze it!

Re-heat and eat meals are your best bet. Black bean chili, Lentils and brown rice, Chickpea stew, Mushroom barley soup - think super healthy. You need the fuel. As D, suggested - try out some new soups and stews. So what if it's hot outside. You'll stock your freezer with foods for this trip and you'll have some leftover too. Embrace this opportunity and have fun. Use it as an "excuse" to take yourself to the next level!

D has some great ideas. Remember to take planty for healhty snacks too. When Ido not have enough snacks I tend to buy less healhty stuff. Good luck throughout the week.

Do a search on any of the recipe websites (or up in the recipe thread!) for cold salads. . .then make ahead of time, put in a tupperware, and take with you, since you'll have a fridge.

Or, ask around if anyplace nearby has good, healthy take-out. . .tabouli, hummus & pitas, that sort of thing. A single order of that might be enough for two dinners.

Grill a chicken breast or two and put those under some of your tomato sauce for lunch so you don't get tired of pasta Smiler

If you've ever wanted to try out a soup recipe, do it now! Freeze it in tupperware containers of the size that you'll eat, and then put them in the fridge. You can take those for lunch, too. Plus extra soup freezes really well in single serving sizes in sandwich bags.

Deli meat & cheese, plus whole-wheat wraps, might be nice to have on hand. Nectarines are in season and do really well in the fridge, if you think you might get the snack attacks in the evening.

There are some coolers on the market that brag about keeping ice frozen for 5 days. I don't know how often you'll be travelling like this and if that's a good investment for you, but it's a thought.

Have fun while you're there, try a few new places, and get outside to stretch your legs and breathe fresh air so you don't feel cooped up first in the office, then in your hotel Smiler
