I had an appetizer salad at the Cheesecake factory that was so yummy. I wanted to share. It would be easy to make in a Cooking Thin kind of way. It would be great with kd's balsamic vinagrette dressing from the yellow book. The beets were probably roasted. And I would roast the asparagus as well. Here is the listing from the menu:

FRENCH COUNTRY SALAD
Mixed Greens, Grilled Asparagus, Fresh Beets, Goat Cheese and Candied Pecans

Yum---- I eat lots of salads and use them as a vehicle for the foods I love.

Oh yeah, the roasted beets and goat cheese combo is to die for! I've never tried adding asparagus, but that sounds good, too. Thanks for sharing.
