I bought an eggplant (approx. 2 weeks ago) cause I found a recipe for eggplant meatballs, put it in the fridge and complely forgot about it, untill I was cleaning out the fridge yest, (and somehow it got stuck in the back) how can you tell if is still good

is it flacid and limp, or hard? it tends to get flacid the older it gets. short of obvious signs of spoilage, you could probably still cook it but some of its flavor might be lost from age. eggplant does not have too much nutritional value anyway so you won't be hurt in that department. good luck

I would toss it Carole. Eggplant usually don't last very long in the fridge, couple of days at best is my experience.
Eggplant should be very firm to the touch with a shiny, intact, unblemished skin.
