Multi-Grain Bread Recipes

Good Morning ALL

I've been looking through the cookbooks, ALL of them, and can't find a bread recipe that strikes my fancy. I want to make a bread with a LOT of grains and seeds for texture and with moisture. I also want it to taste good, not too sweet. At this point, I'm at a loss.

Anyone have a favorite????

I got my copy of Shirley Corriher's book "Cookwise" from Overstock.com I find they have decent prices and a good selection of cookbooks. Which reminds me, I have to look for a copy of "Greens" for my mom.

That zany lady on Good Eats, Shirley something, has a book out called Cookwise. It has quite a big section on breads. Their might be something interesting there if you could find it at the library. It is expensive. I know because I have been wanting it but can't afford that much right now. I look at it occasionally when at Barnes & Noble.

Thank you for your responses. I'm not a novice, in fact I have a degree in culinary arts with a specialty in baking. I just haven't found a recipe I like and was looking to see if anyone had one they were especially happy with.

I started with substituting whole wheat for some of the white flour and then experimenting with adding rye flour, oats and what ever. For me, it has been trail and error with some great successes. I don't have a recipe.
What about a baking class to learn some of the basics and go from there?

I used to make bread all the time. There used to be some great cookbooks at the library that were only bread recipes. Maybe one of them had the title "Breads!" They might have what you are looking for...

Now I know where to buy good bread...
