For dinner last night I made kd's chicken taco Casserole with only half a can of beans. It was great- way better than Taco Bell, kd. I did not even mind the beans- they seemed to just become part of the whole! These recipes are terrific.
Now I'd like the peanut butter truffle recipe you mentioned!

Peanut butter truffles are in KD's Receipe Swap. My 5yr old likes them better then then his store bought candy. See even my children are baby stepping to a Healthy Lifestyle. Big Grin.

Lori, the butchers are there, just probably hidden behind a window or a wall behind the meat case. There's probably a bell to ring or something, but if they've got recently packaged meat, they've got a butcher & all the equipment Smiler

And I know it's not a big help, but I'd also recommend, IF you have the time, finding a smaller meat market/butcher shop. It's usually less expensive, they'll do custom orders (ie, grind up 5 lbs of chicken into 1 lb packages), and once you get to know them, they'll often hold things they know you'll like. The market we shop at has a freezer case with ground lean pork, ground meats of all % fats, ground dark/light mix chicken, ground white chicken, ground turkey . . .I could go on, but you probably get the idea Cool

I bet that shreadded chicken would work too. I use that when I have the whole breasts and no ground meat.

I think that chick breasts cubed up into 1/2" pieces would work.

I just read the recipe and now I get Sandy say, "It is way better than Taco Bell". Sometimes my husband will say, "This is better than Boston Market". My reply, "Ummm, like thanks... I think..."

I think kd mentioned on the Today Show that you could ask the butcher to grind the breasts for you. I am not familiar with Costco (not in my area of the country) but imagine they have a butcher?
If this is not possible, I would try the processor you have- why not!

I have seen the recipe in the book and it looks great, but I was wondering, have any of you found ground chicken in your grocery stores? I haven't, and I buy my chicken breasts frozen at Costco (they are WAY too expensive at the grocery store). Don't know if my food processor would work or not, it's pretty old, and seems pretty dull....any other suggestions?
