Menu Planning for Everyone!

If you want some menu planning accountability, here's where to come. Post here to keep yourself on track, look for some suggestions, or offer a tip that's working for you.

I try to plan my menus on the weekend but when I can't do that I at least try to have a plan for dinner before I get to lunch. (:

Tonight's plan, spaghetti and a big green salad.

Egads, I haven't planned healthy meals in quite some time apparently! Like pulling teeth but I seem to have gotten it done and a grocery list made so I can go to the store after dinner tonight.

M: Grilled Hawaiian Chicken, leftover potato salad, green beans and pineapple
T: Leftovers from Monday
W: Grilled salmon, couscous, broccoli
Th: Chicken Fajitas, black beans
F: Leftover fajitas, black beans
Sa: Out to dinner at Tapas restaurant
Su: TBD

Menu planned for the week, grocery shopping: DONE!

Tonight we had: Ham steak, organic mac-n-cheese(I like that this kind only used milk, no butter), haricot vert salad.

Monday: Pan-fried chicken(from Cooking Light magazine, skin removed, very small amount of oil for frying), butternut squash, strawberry/pineapple salad.

Tuesday: Chili, cornbread, boston lettuce salad.

Wednesday: Roasted cornish hens, roasted brussel sprouts/carrots, saffron rice.

Thursday: Probably veggie or turkey subs from Subway-I have only 45 minutes between end of work day and dance class (only one more week of this class-woohoo! Then I can get back to a more normal schedule.

Friday: Dinner at my sisters house-always something fairly healthy-she is on WW.

Saturday: Most likely a seafood dish made at home. Dd at her dad's and she hates seafood so we use those nights to make dishes we avoid during the week when she is home.

Breakfasts: Oatmeal, or cereal, with fruit.

Lunches: Made a chicken salad with very little mayo, some lemon juice, pickles, celery, onion. Either eaten on lettuce or ww bread or wrap. Fruit and carrot sticks. Also have some grilled chicken tenders, fresh mozzarella, tomatoes, and basil for a fresh chicken salad. Dd has been taking pb/jelly sandwiches or ham/cheese wraps and grapes to school. She no longer eats school food because she has decided it is gross and fattening(yay!).

Tonight we made shrimp Parmesan(sp?). It was a recipe out a cooking for 2 magazine and it was great. If anyone wants the recipe I will post it. Tomorrow night we are going out for dinner. Sunday we have NO plans to so we have plenty of time to do a menu for the week and go shopping for groceries.

My SO is on a kick and I am so proud of him. He is eating ww pasta, wg breads, cutting back portions, and has stopped putting salt on foods. He used to pour salt on everything, but no more. And he has lost almost 9 lbs. in about 2 1/2 weeks! Why do men lose so much faster then women? Frowner

I made a roasted mojo pork that was amazing. It was really easy and took 5 min. to prep. I served a brown rice & french lentil pilaf and asparagus.

Tomorrow is probably going to be shredded pork tacos to use up the rest of the pork. Sometime in the next two weeks I'm plotting a batch of enchiladas verde with chicken & spinach in the filling.

Most of my weekend will be eating out since I'll be out of town for my first half of the year.


Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.

Dinner tonight was rotisserie chicken, whole wheat gnocchi(used chicken broth and a little Parmesan cheese instead of butter on it), steamed broccoli, and red swiss chard(sauteed in a bit of olive oil and garlic). Tomorrow will be Subway veggie or chicken teriyaki subs and Friday night will be one of the seafood recipes from Cooking Light that we've been wanting to try.

Good for you Jill. It's always nice when things work out.

I don't have a menu planned for this week either, and it's shaping up to be another crazy week. Tonight we had french toast and reduced fat sausages and some orange slices. Tastier, healthier and more economical than fast food, but maybe not the best choice.

I will have to ponder tomorrow night's choice. I have a feeling my mom is going to ask us out again, so I might have to have a counter offer.

Well, dinner was not planned out for the week and I still don't have a plan. I want to take a few minutes tomorrow to put together a menu and grocery list because life is much easier, and we eat healthier, when we are organized and prepared. Tonight I surprised myself. I had to run my dd to Wal-Mart after I finished working at 5:15 to get her a few last minute items for Disney. We were driving home and I was worrying over dinner. It was 6PM and I had to be at dance class by 6:55 and I had no plan. I pondered fast food and said NO to myself. There has to be something at home. So, I remembered there were frozen chicken breasts and some veggies. Came home, poached the chicken in some chicken broth and water. I sliced green peppers and onions, sauteed them in a bit of olive oil, added the cooked chicken, some snow peas, and chopped tomatoes, a few canned diced green chili peppers and some spices and walah! Chicken fajitas! They were so delicious and pretty darn healthy. Other than the maybe Tbsp of olive oil, I added no additional fat. Topped them with fresh cilantro and chopped spring onion. I have to remember this when I am pondering fast food/take-out. I have to remember that there are most likely ingredients at home to use to make a better meal. Also more cost-effective! And the best part about dinner-I started cooking at 6:05PM and dinner was ready to be served by 6:30-time to eat, grab my tap shoes, and head to class.

Ugh...this week is not working. Last night we went out for sushi. My mom was buying and I had had a crappy day. I just couldn't turn it down.

Tonight I will make the pasta dish. It just sounds so tasty. And as a bonus I should have some leftovers so that I will not be tempted to eat Steak and Shake at midnight when I get home from my show.

Glad to hear it's going well Jill. I totally agree that it is fabulous not to have to stress over dinner while starving at 6:30.

My week isn't quite going according to plan.

Both dinners out were o.k. I didn't go overboard at the pitch in, although I did try two deserts, but only the homemade ones. Saturday night's dinner was great, and reasonably healthy, pork roast, mashed potatos, and salad. There was also homemade angelfood cake. Yum.

Sunday night we ended up at my parents for dinner. It was pot roast which I love, but rarely get, since S can't stand it. I did have seconds.

Monday I got stuck babysitting all day which included the lunch time hour, I didn't get much to eat, so I was starving when I left. We ended up at a local hamburger joint.

Last night was film night, so we didn't get dinner until 10, but I stuck to the plan and had egg mock muffins and fruit salad. Way better than a greasy burger!

I think tonight I may try one of the recipes I meant to make on Sunday or Monday. But, that will mean a trip to the store. I hope I can squeeze it in.

Doing well with menu:

Sunday made the cornish hens/veggies
Monday made the hoisin flank steak and cucumber salad
Tonight made the chipotle flank steak, cole slaw

PS: It's soooo nice to know in the morning exactly what we are having for dinner. All ingredients at home, ready to be cooked. No running to the store last minute, or ordering take-out.

We have a big batch of taco meat that I've been eating. So far I've had tacos, taco salad, and plan for burritos in the next few days.

I'm making the barley & kale soup again today, since I'm home solo and can dump everything into the rice cooker and not twist the old wrist around much.

i made KD"s pad thai for two of my lunches this week. going out for Thai tomorrow (overload on thai???), and i think it will be kofta curry for thursday. not sure about friday.

had a good weekend as far as eating and staying balanced. Watched AUgust Rush on DVD--kind of sappy but ok.

had thai food sunday and now, am feeling a little bloated from the sodium.

We made a dinner menu for the week and went to the farmers market and grocery store yesterday so we are all set. Here's the menu:

Sunday(already ate and dishes done!): Roasted cornish hens, roasted asparagus, cherry tomatoes, carrots and brussel sprouts (I made the carrots/sprouts together and the asparagus/tomatoes together), I made dittalini pasta for dd and my niece, SO and I skipped the pasta.

Monday: Hoison Flank Steak with Asian Cucumber Salad, baked wonton wrappers(brush first w/dark sesame oil and sprinkle with Chinese 5-spice powder and bake til crisp).

Tuesday: Chipotle Sloppy Joe's, Baked Lay's chips, homemade cole slaw

Wednesday: Spaghetti w/meat sauce, big green salad

Thursday: Most likely a Subway night. We have been getting the veggie subs or turkey subs, last week the Sweet Onion Chicken Teriyaki. Subway is right next to the dance studio where my thursday night class is it's quick and easy.

Friday night: Spicy shrimp w/veggies over pasta

The sloppy joe, hoison flank steak and side dishes, and the spicy shrimp dishes are all recipes from Cooking Light.

Meatloaf sounds great! And think of the great sandwiches you can have tomorrow. (:

The potluck dinner went o.k. I ate more than I should have, but I didn't go back for seconds and I only tried the two deserts that were homemade. And of the food on my plate, a huge portion of it was the Chinese Chicken salad that I brought.

Tomorrow night we are going to a party, don't know what the dinner will be like.

Friday nights we typically go out for dinner or order something. We are making dinner tonight and while not the healthiest of meals, I feel better that we are cooking at home. We are having meatloaf, mashed potatoes, and corn.
