Good afternoon all. I'm fairly new here. I've watched KD for some time but just found this site. Used to cruise thru the old FN board as I had time. But really love this one.
It great!!!!!
Anyway to my point. When the weather turns hot, my family is not much for eating hot meals. This means more salads, etc (this is not all bad). Just looking for new and different items for cold meals.

What's your favorite summertime meal.

During the summer I make so many things into salads. I use any protein I have and grill or broil. I then use all the great veges from CSA or my garden to make new salads throughout the season.

Hi, and welcome. I just posted practically the same post word for word...check the recipes or cooking section of the CT board for some really good ones...we've tried several of these, already and they are great!


It's never too late to get it right.

We can't really grill out, being in an apartment building. I do a lot of salads and grill on the foreman grill

I do a lot of quick cook dishes like tacos and stuff too.


My absolute favorite dinner would be BBQ chicken, potato salad, corn on the cob and sliced tomatoes and cukcumbers. I just really watch how much mayo i put in the potato salad and watch my portions.

We like to take leftovers like steak and ham, a boiled egg or two, and some fancy cheese, and top a green salad with it. It's like a whole meal on a plate.

We do much of what Lori4squaremom mentioned, but I also do quite a few stirfries, since they don't heat up the kitchen much and are usually pretty light.

There are also lettuce wraps (asian), using your grill as a roaster (think KD's roasted chicken from book 1) and whatever I can find that isn't heavy.


Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.

we grill out a lot during the summer, do a lot of QUICK pasta meals, sandwiches, salads, pasta salads, crockpot meals.
