I made a really great vegetable soup yesterday, but not the typical veggie soup. I used 1 ½ boxes of organic chicken broth and added garlic and pepper. I used carrots, onion and celery, sweet potatoes, turnips, parsnips, acorn squash and butternut squash. (For all of the ingredients but the squash, I sautéed hem for a little bit prior to putting them in the broth. So, that’s how I had it yesterday, and it was good, but seemed to be lacking something.
Last night, I grilled chicken breasts for our salad. I diced the leftover chicken breasts and added them to the soup. Between the flavors melding better overnight, and the addition of the chicken breast, what was a “good” soup is now a GREAT soup.
