Someplace relatively recently, I saw a recipe for Boston brown bread that would be cooked in coffee tins in the crock pot. I thought this would be agreat idea for my siblings. Now that I have the coffee cans, I can't seem to find the recipe. Was it on here? Does anybody have any help for me?
In a 1-cup measuring cup, mix to disolve: 1/4 c very warm water (110 -115 degrees) 1 package dry yeast 1/2 tsp sugar (Mixture should bubble and foam)
Heat in small saucepan until batter is melted: 1/2 c milk 1 tbsp shortening or butter 1 1/2 tsp salt 2 tbsp sugar
Pour into large mixing bowl and add: 2 tbsp brown sugar 2 tbsp molasses 1/2 c whole wheat or graham flour 1/2 c water
Stir in dissolved yeast mixture.
2 1/2 to 3 cups all purpose flour
With electric mixer, gradually beat in 1 1/2 cups all purpose flour for about 2 minutes. Stir in remaining 1 to 1 1/2 cups flour until dough comes away from bowl. Pour into well greased coffee tin and cover. Place in preheated crock-pot, cover and bake at high 2 to 3 hours. Makes one round delicious loaf.
Linda, their is a fantastic boston brown bread in Crockpot Cookery by Mabel Hoffman. I can personally vouch for this recipe as been delicious! I will see if I can find the book (but I may have given it away), and see if I have the recipe. If not, that is the book that it is in, so maybe you have it, or could get it from the library?
