OK, so I tried Kathleen's granola. It looked REALLY dry as I was making it. So I added some extra water/brown sugar. Now it is really moist (and dry!). Did anyone else have this problem.

What recipes have worked for you (our of her cookbook)?

I've tried KD recipes from this site, from the Food Network site, and from her second book -- too many to list here! I really haven't found one I don't like.

Two that I really love are the beet dip and the beet and carrot slaw. Before I found these recipes my DH wouldn't touch beets.

Also, my son often makes a special request for the Cinnamon Apple Oatmeal Muffins in Getting Thin & Loving Food.

I've made tons of stuff out of both books and enjoyed everything.

Some of my favorites are the curry recipe from the second book, the rhubarb cobler from the first book, the chicken tonette, etc...

OH I tried the school night chicken burritoes but I like my mixican dishes a little more spicy than these were.

Andthe Washington Street Peach Cobbler was delish.

I've made the following:

Mozzerella-Tomato Sandwich - This is my favorite. sometimes when I toast the bread, I put a little fresh parmesan cheese on it and I end up smooshing the garlic and putting it in the oil and then on the bread. I've also griller portebellos and put them on this sandwich.

I made the Apple, Pear, and Cranberry Crisp in the dessert section of the web site. That was delish. I also used the spices on the roasted turkey recipe for the breast I did, and it turned out wonderfully

THe broiled Fennel with Lime and Parmesan will not be repeated in my house.

I took KD's Pork Fajita Salad Recipe and changed it out to just straight fajitas. Those were delish!

The PB Truffles - Those are delish and I find I'm not snacking on candy as much since I have these.

It was dry the first time I made it. I e-mailed kd and she said when the syrup comes out of the microwave it should be thick. I had to nuke mine a little longer to get that consistency. Then it worked fine.

Hi tsuzporter! Welcome!

Well, I too can proclaim to love virtually every recipe I've tried. A particular favorite of mine is the Thai Shrimp (blue book I think). It is delicious and fast. I also love the spicy carrot slaw (likely potluck candidate this holiday season) in I think the first book. Oh, and I made the Apple Cinnamon muffins in the form of quick bread a week or so ago for a party and it went over well.

As far as the granola goes, I've made it a couple of times. It does not tend to 'hold together' for me like packaged granola. I think that it is a matter of not having much in the way of fat which is what holds the commercial stuff together. Keep playing with it. You could also search granola on the board because this issue has come up before and I think folks have made suggestions for others. I personally didn't care too much that it wasn't chunky so it wasn't too big a deal.

I have made almost every recipe out of the first book and have loved all except the Minestrone soup and the onion rings. I especially love some of the salads and slaws like the spicy carrot slaw, that cuke and tomato salad with the lemon yogurt dressing, and the nappa cabbage slaw salad. I also love the porcupines.

From the second book I haven't done as much, but we have had much success with the chicken burritos and the chicken stir fry. I also love the Thai shrimp, but have found it time consuming with cleaning the shrimp and juicing the limes. But it is yummy. I've noticed that for me many of the meals in the first section that are supposed to be quick and easy aren't. But I haven't made anything I don't like. I love the Ribolita using fire roasted canned tomatoes (I don't even add the bread).

I made KD's meatloaf recipe, but cooked it using Rachel Ray's meatloaf muffin recipe.

I think that I've made about 30-50 different of KD's recipes from the two books.

I belong to a dinner co-op. I cook (and deliver) dinner on Mondays for my family and 3 others. On Tues, Wed, Thrus... the doorbell rings between 5-6pm and they bring dinner to us.

I use KD's recipes a LOT. They always turn out well. If it says that it serves 4, I just triple the recipe and it works out fine. Nobody thinks that they are eating "diet" food. The dinner co-op sits down every 3 months and we go over last quarter's dinners and then plan the next 3 months. I've NEVER had anybody say, "OK... the chicken dish you made on Nov. 6... that did NOT go over at our house." And many recipes are requested again.

I don't have time to list all of the recipes I've made that have turned out well. There are a LOT of them.Smiler

Only thing that I wouldn't make again... Strawberry Mousse. I made it for dessert for my family and a neighborhood kid. My son (I think he was 11 or 12...) and the other kid raved, "WOW!!!! This is the best strawberry yogurt we've ever tasted." And it WAS very yummy... but tasted like strawberry yogurt to us all. Being naturally lazy, next time, I'd just get some Fage and mix strawberries and it would be a little easier. Smiler

I make the granola quite frequently, and have never had a problem with it. Unless you count it going so quickly. Wink

I have only not loved one recipe so far out of any of her books. It was a chicken & bell pepper recipe from the first book.

I have made some of the frittatas and now make my own versions based on KD's.

There is a chicken in the first book that is delicious. I can't remember the name (Spicy Curry kebobs or something, really good but not really spicy.)

The baked asparagus is wonderful and I frequently make asparagus that way now.

The only recipe that didn't really *wow* me, was the meatloaf in the first book. It was good, but not wow and it took like 3 times longer to cook than what the recipe suggested. However, I just saw a post by Denise where she made it in muffin tins or something and I think that might work a lot better.

We have made the Chili Pork Stew and BBQ Chicken Pizza from the DVD. And we love the BBQ Burgers from her cookbook (I think it is the first one). We make it with turkey.

I have made KD's granola several times and I have not had it that dry. Could be because we are using different ovens. Just a thought.

I have made her taco casserole, pad thai, tomato and tortilleni soup. Those are just a few that I can think of off the top of my head.

Hope you enjoyed the granola. I am planning on making it for some holiday gifts and put in some fun tins. Smiler
