I thought I would see how everyone's dinner was last night. Some of us made pork...I am def. going to be making it more like I used too.

What did everyone else have?

I'm so Irish I've been wearing Green for a week - good thing it's my favorite color.

Despite not feeling well yesterday, I guided ds and dh into making my annual jigs dinner. It was delicious! I especially enjoyed the cooked cabbage. Ate every bit since the other two wouldn't even touch it.

I know enough to watch out for the salt content in the corned beef and to portion-control and freeze the remainder.

I feel skinny today - I don't think it's the dinner, but after 1-1/2 days of feeling Frowner
I'm glad to be feeling as well as I do.

LOL! It was *very* spur of the moment. I took an early lunch, raced to the store to buy the ingredients, went home, prepped the ingredients, threw it all the crockpot, and raced back to work. Total time: 50 minutes.

Unfortunately, in my haste, I forgot to bring the recipe with me, so I had to go on memory (a dangerous thing). When I got back to work and looked at the recipe, my quantities were totally off. Yet, the stew got rave reviews ("put that one in the file"), so I guess I did OK.

But too bad my black and tan blended. Some day I'll master the black and tan. Still tasted good though. Wink

WE are so not St. Patrick's Day people....I am almost embarrassed to say so. We had meatballs, made from turkey and lean sausage, baked potatoes, salad and peas. Leprechauns will be visiting us I am sure.


It's never too late to get it right.

We ate at GF's mom's, so I didn't cook.

However, at lunch I went home and threw together the makings for Guinness & Beef stew in the crockpot. Can't wait to see how it turns out!

We had whole wheat pasta with asparagus, red bell peppers, zucchini, onion, shrimp and goat cheese.

Mine turned out okay. It is better when I make it like normal with the balsamic, honey and dijon. It has a bit more of a kick, and the extra honey makes it more of a "glaze" than just a marinade.

It is one of DS's favorite meals, one time when I made it, I wasn't able to marinate it for as long as normal, and DS actually said "Mom, this pork chop isn't marinated enough for my taste."...

This kid has watched too much "Good Eats".
