I thought I would post my menu for the week. Here's the basic plan, although it seems to be changing since I found some good stuff at Cost-Co this morning.

Last night was Chinese Chicken Salad. Tasty, but it needed a side. Usually I would make pot-stickers or egg rolls, but I was out. We were both munchy after dinner.

Tonight: Pork Roast, Roasted Mushroom and Potato Salad, and Green Beans.

Wednesday: Meatloaf, Mashed Potatoes, Green Salad

Thursday: Meatloaf Sandwiches, Mac and Cheese, and Carrot Salad

Friday: out

Saturday:Home made pizza, Salad

Sunday: Turkey Chili, Beer Bread, and Salad.

I may swap the meatloaf for a slow cooker Brisket recipe. I would really like to have some good slow cooker recipes. My mom never used one when I was growing up, so they seem sort of foreign to me.

I also bought some short ribs which I might swap for the chili or they may go on the menu next week. I have some sweet potatoes and some delicata squash to use too. So many tasty things, so little time to cook them!

Thanks for the tip Peggy. I have actually poked around that site before.

Here's my plan this week.

Monday: Crock Pot Brisket with Onions, Egg Noodles and Broccoli.

Tuesday: Taco Salad

Wednesday: Leftover Brisket

Thursday: Hot Ham and Cheese Sandwiches, Oven Fries and a Salad

Friday: Meatloaf and Mashed Potatoes, Salad, Other Veggie. (I didn't actually make meatloaf last week)

Saturday: Out?

This is a busy week for me, lots of dinnertime obligations. I have a bunch of new recipes I want to try, but this was not the week for them.

She did a crockpot recipe a day in 2008. I have tried a few things that she liked and they came out well. I also like to search the Cooking Light site for crockpot recipes. The other really good one for that is all the Reimann Publications (Taste of Home, Light and Tasty, etc). They seem to have at least an entire page devoted to crock pot recipes every issue. You can search their website too. I love mine and use it quite a bit for chili, chicken and broth, roast beef, soups.

Sounds great. I will have to try that one out. Is it from the most recent issue?

Last night we had leftover pork and roast veggies. Tonight I am thinking I might do the short ribs, not too sure.

This Cooking Light Bacon Mac recipe was on our menu plan and we made it last night. It is EXCELLENT! Much less fat and calories than the home made mac-n-cheese I normally make. There is a small amount of bacon in it, as well as some green onion and those two ingredients pack a lot of flavor in the dish.

Last night we had KD's Sunday BBQ Burgers (even if it was only Tuesday Wink
Today is grocery day so we will be having poached salmon and a veggie side.
Tomorrow is trivia night so we will be eating out.
Not sure about the rest of the week.

I like my sweet potatoes baked with just a little butter. Never cared much for all the extra stuff added to souffle or pie.

The Delacata squash we like to cut into strips and bake(sort of like oven fries).

Hey Jill--That menu sounds great! I love cooking light. I think I need to go through my magazines again. I just bought the new Everyday Food, and I kid you knot, every other page is dog-eared. There are a ton of good looking seasonal recipes in it.

I didn't get to make the mushroom and potato salad tonight since the oven was already in use. So I sauteed the mushrooms and put them over pasta as a side dish. They were yummy. I also added some home made applesauce as a side.

Our menu plan for this week is:

Last night: Had braised beef with root veggies (recipe from Cooking Light), romaine salad with chopped apples and toasted pecans with apple-cider vinaigrette, and rosemary roasted potatoes.

Tonight: Ham steak, green beans, leftover salad from last night.

Wednesday: Crock-pot chili and cornbread

Thursday: Baked chicken parm (also a Cooking Light recipe), caesar salad, polenta

Friday: Grilled turkey/ham/cheese sandwiches (Cooking Light again!), homemade tomato soup

Saturday: Baked pierogies, sauteed baby bok choy and shiitake mushrooms, and leftover tomato soup.

Sunday: Bacon mac-n-cheese(guess what Light cooking magazine I got this recipe from...), green beans or salad, stewed tomatoes

We may go out one night over the weekend but we are set for the week.

DD and SO take sandwiches, crackers, fruit, veggies for lunches. I eat dinner leftovers.
