I know that Bee has made this, and am hoping that someone else has so they can answer my question.

I have thawed out 5 b/s chicken breasts because a couple of them were pretty small. Is the pesto mixture in the recipe going to be enough for 3 large (probably 8 ounce) chicken breasts and 2 small (probably 4 ounce) chicken breasts?

Also, this pesto mixture is really good, and I LOVE that it isn't greasy and oily like regular pesto (I really hate that feel of regular pesto). Will this work on pasta? Will this mixture either freeze or keep well in the fridge for up to a week?

I'm making this for dinner tonight. I didn't even know this thread was here until just now. I forgot to buy tofu at the store (I also need two other things that can't wait til next week), so I'm stopping on my way home. I'm really looking forward to it!

Well, I didn't need to stretch the pesto, because my stupid 13 year old cat jumped up on the counter and grabbed one of my chicken breasts when I had my head turned!!!! So I prepared it with 4 breast (and it was just enough for us).

This recipe is SOOOOOOO delicious! It was wonderful! And soooo healthy! Smiler And very low in calories! THanks, KD! We really really enjoyed it!

Thanks for pointing out this recipe -- I haven't really had a chance to look through the whole book, but I love pesto and I'm sure it would be great on chicken and with pasta. Can't wait to try it.

Hmmm so many questions, so few answers SmilerLet me think about this. I'll look up the recipe again and see what comes to mind regarding the pasta.

As far as stretching the pesto, remember the loaves and the fishes. I believe you can stretch anything when you need to Smiler

I haven't made KDs pesto, but I make another essentially no oil pesto and it is delicious and works just fine on pasta.
