I am soooo in need for lunch ideas. I got alot from looking at your posts, but I need some that are super fast, as I'm always heading out to the horses. Any ideas?

Thursday's plan

breakfast - oatmeal with strawberries, coffee with skim milk

snack apple, water

lunch turkey sandwich, fruit salad, water

snack - water and the same old carrots i have every day!

dinner - not sure. maybe one of the recipes from kd's new book. anyone tried any yet?

Hello All
I am new to the forum but here it goes

Breakfast
low fat tortilla filled with 1/2 cup egg beaters, spinach, low fat cheese (tiny bit), red pepper and a tiny bit of salsa

Snack
1/2 cup skim milk
1/2 cup chai tea not sweetened concentrate
1 tablespoon whey protein chocolate
crushed ice

Lunch
asian beef stir fry made with lean steak and wheat spaghetti noodles, nappa cabbage and onion and peppers. small side salad about 1 cup with a little low fat italian dressing.

snack
1 low fat moz. stick
1/2 cup non fat vanilla yogurt

dinner
beef stew made very low fat with potatoes, carrots and lean steak
small side salad with just veggies and low fat italian dressing.

Exercise- did 50 minutes of cardio and will spend 20 minutes on weights at home.
B-2 c wheatties and skim milk
S-1 c strawberries
L-pizza- same as dinner last night- leftover
S-1 c skim milk with hot tea
D-2 c lf asparagus soup

s- handful of almonds
D: Spaghetti and Garlic Bread 1 slice

Exercise: Horseback riding
barn exercises, my own weigh/cardio/stretching routine.

Tonight's dinner will be Safforn risotto with a side salad and Italain bread. I plan to slice up only half the loaf, and save the other half for sandwiches this week.

Breakfast was a small serving of whole wheat griddlehoppers (pancakes with sprinkles) smeared with blackberry preserves and a small bowl of fruit salad. Lunch was a small WW grilled cheese and a bowl of LF vegetable barley soup.

S: Nectarine
D: Smart Start cereal w/1% milk
Pineapple chunks


Rest of Summer Goals:
1. Exercise-Cardio: Min. 2-3 walking or DVD cardio workouts per week.
2. Exercise-Weights/Toning: Min. 1 weight plus 1 toning workout per week.
3. Food: Get those veggie servings back up to where they were!
4. Behavior: Start reducing sweets now that the automatic after-meal response is better.

Last night I threw together a salad before I had to leave for a party. Mache, walnuts, very little sheeps milk blue cheese, and grape tomatoes. (I usually use mandarin oranges or clemintines instead of the tomatoes, but I was out.) and red wine vinegrette.

Tonight's dinner will be:

Whole Wheat spaghetti with Laura's lean ground beef; garlic bread and a salad.

Posting for Tuesday as I will be out all day and need to plan ahead.
No exercise
B- 2 c wheatties and skim milk
S- strawberry banana smoothie (I will make at home and take)
L- going to salad bar place- will get fresh veggies, 2 oz cheese and 3 small breadsticks
D- pizza with ww/rye crust and wild mushrooms and 2 oz cheese.

This is going to hold me doubly accountable as my dh won't be home tonight (danger times for me!)
Exercise - lower body/ab weights plus 35 mins on the stairmaster
Food:
B - ww english muffin w/cream cheese and fresh chives
L - sushi and 1 T of mini m&ms
S - ww tortilla w/hummus and 1 c of strawberries
D - pan seared salmon, egg plant, mashed potatoes
Dessert - 1/2 c of light ice cream

Last night we had Pecan crusted trout (baked), green beans and brown rice pilaf.

Tonight was going to be WW Spaghetti made w/ Laura's lean ground beef, and eggplant arrabiatta. But then my DH reminded me I have a party to go to at 7:00 and I'm not usually home until 6:30-6:45....

I usually post my meal plans on the Cooking Thin board but have been unable to access the site for a few days now. I can get there but I get shut down before I have time to read a post!! I ran a virus check and that wasn't it so I'm calling my ISP today to try to get help. At least I have this board. Here is my plan for Monday: Breakfast- Egg on wheat toast w/veggie sausage patty,grapefruit juice and coffee w/soymilk creamer and splenda. Lunch- Bean soup and 1 slice bread,diet coke. Dinner- Tofu veggie stir fry w/pasta and broccoli w/fat free Italian dressing. Snack- Coffee low-fat yogurt.

Here's my plan for Sunday: Breakfast- Smart Start cereal w/vanilla soymilk,orange juice and coffee. Lunch- Grilled chicken sandwich,carrot and raisin salad 1/2 cup and diet coke. Snack- nonfat latte and 1 low-fat biscotti. Dinner- 1 cup shrimp and vegetables and 1/2 cup rice,fortune cookie and tea.

To kd and all who created this beautiful site: I love logging on here and feel really inspired, postive and capable when I look through the site. Thanks so much. I am going to post my daily food here.
Sunday- Exercise 40 minutes walk with small bits of run mixed in. (Done) I will go do 15 mintues of upper body when I finish posting here.
Food-
B- 2 c puffed Kashi and skim milk
S-1 c grapes and 1 c diet cran juice
L- 1 c ww pasta with dh's tomato sauce and 1 small meatball (1oz), 2 oz Romano cheese and salad with red leaf lettuce, carrotts and cukes, 1 T evoo, mustard and balsamic dressing.
S- 3 bites ice cream- we're going to an afternoon get together.
D- Going to soup and sandwich restaurant. I will have sm. greek salad, no dreessing and no olives, 1 roll and 1 sm bowl broc cheese soup.

L- leftover spinch and rice bake (preportioned)
S- 1/3 c dry roaseted peanuts
D- Beef stew with veggies (mostly mushrooms and carrotts) and red wine sauce (1 cup) served over 2/3 c barley.

Just had KD's asparagus, ham frittata and loved it. It was a snap to put together and had loads of wonderful ham flavor. (I used an Applewood smoked ham.) I used Pecorino Romano cheese on top and we loved it. I served oven roasted sweet potato fries with it.
Thanks, KD. The meal was a hit. My 6 year old wants to know, "when can we have it again?"
