Last night for dinner I had pan seared grouper, mashed potatoes and sugar snap peas, and a few bites of my DH's ceasar salad; and about 3 glasses of wine.

I think I chose pretty well for being at a really good Italian restaurant.

Then after dinner, I played a game of bocci ball.

Today:
Coffee
B- egg sandwich on whole wheat (1 yolk, 2 whites and reduced fat cheese.)

S- fruit salad

L- Leftovers

S- Not sure

D- Boneless skinless chicken breasts somehow. Maybe fajitas...gonna have to take stock of the fridge.

Dawn

We are having vegetarian enchilladas tonight. I am not making them, but, by the chopping going on in my kitchen it should be good. I guess hub. is making them just like regular ench. but with vegies and tofu only. I've never had tofu, so this should be interesting. A salad and some salsa to top it off....I'll report the success later.

It's never too late to get it right.

Went to Fresh Market and had a cheese sandwich made, w/ lettuce tomato and sprouts. They put WAY too much cheese on, so I took a lot off, then they also put so much mustard on it that the bread was falling apart. I ended up eating half the sandwich, and then taking one slice of bread off. I also had fruit salad and FUZE Mojo Mango drink.

Ok I posted this on the other site as well. Tomorrow will be a good food day. The last week or so, my plans were quickly made and even more quickly broken. Bad habits sneaking back in. So I sat down, figured out what i need to do to make a workable plan. I shopped today, and baked. So here is tomorrow's plan:

Breakfast - I made a quiche with a southwestern flair. It has ham, grape tomatoes and diced red bell pepper. I sprinkled the top with a chipotle cheddar cheese, I'll top it with salsa when I eat it. Oh and I threw in some chili powder, cumin and cilantro. It has all the flavors of the breakfast sandwich I was eating, with out the "I don't want to cook" excuse. I'll have an apple with it.

Lunch will be a 1/2 cup of homemade hummous (I skip the tahini so it has less fat), some rye melba toasts and a salad. It is all made and together, no excuses for no bringing it.

Dinner will be a special treat for me. DH is working tomorrow night, so I am on my own. He hates scallops. I bought myself a half pound of bay scallops and froze half. The other half I will use in a pasta dish tomorrow night, loaded with veggies. It's kinda a makit up as you go kind of thing (my favorite way to cook). I may have another small salad to fill in also.

Snacks will be a fruit smoothie, popcorn and my warm milk drink.

Laurie
