I remember a while back someone posting the title of a cookbook that had recipes for desserts that served 2 - 4 people. Does anyone remember the name and author of the cookbook?

Another quick tip I picked up from this book -- when I made the Cranberry Walnut muffins, DH was skeptical about the cardamon. But just as Debbie says, it was a great combination. So when I made KD's Cranberry Oatmeal Bars (from GT&LF) I added a little cardamon to the cooked cranberries after they cooled. Yummy!

LOL!!!!! On New Years Eve, Nelson said, "Did you buy enough chips???? Do you think we will run out of chips????" I said, "We have TONS of food... it is ok to run out of chips... is isn't some kind of entertaining faux pax if each person has one or two servings and than we run out of chips." We had leftovers (which I threw away.)

Actually, this carrot cake recipe was so big... I think that it would have made 6 normal sized cup cakes... easy. I ate 1/2 cup of batter because it didn't all fit in the "cake" pan I use (it is really a little cheese cake pan).

And don't FORGET, the author of this book LOVES frosting... I think I need an insulin shot and I had 1/4 of the cake, and 1/4 of a cup of ice cream. The frosting recipe called for 1.5 cups of powdered sugar... and she thinks the cake/frosting serves two... Eeker I used lite cream cheese and lite Smart Balance and "only" one cup of powdered sugar.

But I do like this book. Make a little cake. Eat some. No leftovers.

It has been a GREAT day. The house is clean and no more guests for a while (so the cleaning frenzy and tension is over - yay!). Nelson has been super nice and did a couple of errands in the rain for me (which was like the best birthday present.) He and Jamie got me some silicone bakeware... which looks cool.

Think I'll go have some more tea... to counteract all the sugar... Smiler

Made a carrot cake with cream cheese frosting that was GREAT. All three of us loved it. Jamie asked for it on his birthday.

Could have easily served four people... or the three of us... Smiler

I made the cutest little pumpkin pies today. Smiler

They are sooooo adorable...

They recipe was supposed to make 2 baby pies... but I made 3.

(My dietician would be so happy as the only sat fat was from one egg split 3 ways...)

Small-Batch Baking by Debby Maugans Nakos

I've made a bunch of things from the book... They are not low fat or low cal... but they are very good. Smiler

I've also used Smart Balance Spread (the full fat) instead of butter to cut the sat fat grams and the desserts come out great.

And her servings are WAY generous... if it says it will serve 2 - it can easily serve 3 or 4.
