| they are so healthy! it fixes diarhea, and clears "heat" from your body . also rich in vitamins. slight sweet taste. if the root is very yound, you can just julienne it into salad. otherwise, you can use it as you would any potato--cut it up into a stew or soup, make french fries (or oven baked fries) . or my answer to every problem in the world---just stir fry it! (cut it up first into slices) you can google "lotus root recipes" and a bunch of stir fry recipes will pop up.
