I was reading a column on another website where the owner of the site was raving about a new cookbook. It's all about bread recipes that require no kneading, and about 5 min. worth of work in making the dough, which you then keep in your fridge for upto 2 weeks, baking fresh loaves as needed.

It's called Artisan Bread in 5 minutes a day. I have to admit, I got really excited. I love homemade bread but don't have a ton of time to babysit a loaf over several hours. (And since I'm saving for a new car down payment, I've gotten really, really cheap. That's still really new to me. Wink)

Anywho, I made a batch of dough Saturday night. It did take less than 5 minutes. I was impressed. I made a loaf today, just whole wheat sandwich bread. It was amazing. Soft and chewy on the inside, just a bit of resistance to the crust.

No dough recipe (that I've looked at) calls for any fat. The flavor and texture come from the process and from the wet dough.

I thought maybe you guys might appreciate it.

I tried the bread out on grilled cheese this AM. Hands down the best grilled cheese yet. (My english muffin bread recipe just got retired. Wink)

I'll try to quit raving now, but I've not been this excited about a new cookbook since I bought "Raising the Salad Bar". Big Grin

This bread is far superior to the stuff I can make in my bread machine. Razzer And takes the same amount of time to prep.

Sounds wonderful. I will have to check it out.
I have always wanted to try making bread but never have the time or the right equipment. can't afford a bread machine.
