I tried quinoa this week and it is really good! I was skeptical, but it was tasty. I just made it with chicken broth, but I really liked it. I think it will be a great whole grain alternative for rice. I also tried millet this week. It was good as well. As some of you know, my dh was diagnosed with diabetes and we have been looking for alternatives to pasta and rice. These seem to be good.

Oh! I totally forgot to mention, you can make lasagna using the quinoa....instead of a layer of noodles, you use a layer of the (cooked)quinoa. YUMM!

If your dh misses traditional semolina pasta, I find brown rice pasta absolutely delectable, especially with a great pesto.

What is the ratio to liquid?

Or let me rephrase what I am trying to ask Smiler how much liquid do I need to how much quinoa?

I LOVE LOVE LOVE quinoa! In the summer months, I cook quinoa and millet together in chicken or vegetable broth, mix it with cooked ww couscous and make salads from it....YUMMMMMMMMMM!!!!!!!!!!!!!!!!!!

One thing you need to make sure you do when you cook quinoa is to make sure you rinse it REALLY REALLY well before cooking it. A lot of it is prerinsed, BUT if it isn't it tastes like soap and is totally and completely disgusting!

We love quinoa too. One of my favorite ways to make it is to cook the quinoa in chicken broth and then mix in some salsa. I then stuff bell peppers with the mixture and bake in the oven with a bit of cheese sprinkled on top.

Another good pasta/rice substitute is bulgur.
