I just had the most awesome lunch. Last night we had Vietnamese Tofu Lettuce wraps for dinner. The recipe used about 2/3rds of a block of tofu. So instead of putting the leftovers back in water and throwing them out three weeks later, I marinated them in a mixture of soy sauce, mirin, toasted sesame oil, a pinch of hot pepper flakes, a spoonful of sugar, and a tiny squeeze of lemon juice.
Today I pan seared the tofu slices and then threw the rest of the marinade in the pan. In about 30 seconds it made a thick delicious sauce. Holey Moley it was really tasty. I think I might have to put that on the menu for dinner one night this week.
Sometimes, when I am cooking a chicken or beef dish (chinese dish), I will just throw in some chunks of tofu. the sauce from the dish cooks and marinate the tofu really nicely, and i heast the tofu chunks for breakfast all week long.
I think Rachel Ray also has a great recipe for Ma Po tofu, which is one of my favorites.
a local singapore restaurant has this killer fried tofu dish. very crispy, peanut sauce over the top along with bean sprouts. i love it.
Amy's (frozsen foods) has this INdian tofu dish (with peas and Dal). it is what I had for dinner saturday night. it was a keeper.
