What are you planning on cooking for easter? I have to cook this year and want it to be really special. I just have a feeling you will have some great ideas I am looking for brunch and dinner ideas.
From what I have heard through this forum KD's Lemon Angel Food Cake is suppose to be awesome! You might want to give that some thought. As for the main meal it hasn't yet been decided where we are spending Easter but I just know what I will bring for dessert .

If the weather isn't windy, and it is nice outside, then we will bbq some ribs and chicken and I'll make some pasta or potato salad, baked tortilla chips with homemade fresh salsa, a big salad, the lime jello from above and angel food cake and strawberries. This meal will be served outside, picnic style, maybe even at the park?

IF we stay at home for Easter, and the weather is like it normally is on Easter (windy), we will have roasted pork tenderloin, roasted asparagus, lime jello with cottage cheese pineapple and carrots and celery (the only REAL Easter tradition we have), a big salad, creamy garlic mashed potatoes, angel food cake and strawberries.

I am serving brunch for my husband's family. We will be having the egg strata recipe made with Egg Beaters (available on Egg Beater's website under meatless main dishes). I will also serve roasted new potatoes, sliced oranges and dates, and some sort of vegetarian sausage (3 of us are vegetarian, 2 are not).

WE are having a family "reunion" that weekend on Saturday. It will be my bro and his family of 6 and hopefully my parents. Anyway, it is in the city where my son goes to school, not at anyone's home, I am scoping out restaurants that will take us, and what their menus are. If anyone in the Twin Cities area has a favorite, let me know. I have no ideas except Italian.

ALl I know is I will definately have Asparagus. I love the stuff and it's usually really cheap around then. I am going to miss doing Easter in the PArk in Dallas this year. THe last few years, we have gone there, and I end up doing a really fancy picnic kind of thing. I did a couple of quichy kind of things, a few different salads, and of course, my white chocolate cheesecake with either caramel or raspberry sauce. I can't NOT do that with that group. I think they'd shoot me. LOL Nisha
