I am looking for muffin recipes; finally found some that I think will work, but would like your input. The basic recipe calls for 1/2 cup of oil. That's way too much for me, it only yeilds 12 muffins. So I am thinking that perhaps I could use 1/4 c oil and 1/4 cup plain yogurt. I've done this with cake recipes and although you get a heavier product, the recipe isn't compromised. Any other ideas for cutting down on the oil?
I like this recipe because of the low sugar content and it uses only 1 egg, which can be substituted. I'd really like the option of eating a muffin on busy mornings and am hoping I can make this work.

Something else that I use to substitute for the oil is applesauce, as well as fat free ricotta cheese. I'm going to post a couple of our family's favorite recipes in your other thread. We also use the oatbran recipe that Denise posted for you. It is REALLY good! My kids love that one! I"ll also post a variation of that for pumpkin muffins.
