I belong to one csa which doesn't start until next month. My first choice CSA just called me to let me know they had more shares available.

I'm signing up with them so I can get more yummyness earlier... I may end up going insane with veggies and fruits coming out of my ears by summer's end!

Any suggestions for preserving fruits and veggies?

Community Supported Agriculture...like a co-op you join to get produce direct from the farmer.

Making jam, pickels?
I made 28 jars of strawberry jam yesterday. It is so good and makes the best gifts. Densie is right, though, it is a hot and involved job.

Be careful if you can some of your produce and your microwave is built in above your stove...my mom managed to melt/severely warp the bottom part of the microwave in her old house! If you get a lot of tomatoes, juicing them is a great way to preserve.

Yikes, two shares! I had to give away some of my one share or I would have never eaten it all before the next batch arrived. But I was so impressed at how good everything is that I'm glad I got a full share, even though there are just two of us.

The early stuff was a lot of greens and some radishes. Not good for preserving, but some of the later stuff should be.

I've used the Ball Blue Book to can jam, chutney and pickles...

But warning... the day you are all ready to can... there WILL be a heat wave... and it will be about 105 degrees and you will have 20 gals of water boiling away and turning the kitchen into a Swedish Sauna!

Do you own a dehydrator? You can freeze or dehydrate depending on what it is. And since it sounds like your CSA isn't year round, you will really enjoy that produce come December Smiler
