Holiday plans?

Wondering is you have plans for the long holiday weekend? Wondering if food'll be part of the plan.

I have nothing planned today and tomorrow, but Monday we are going to a BBQ where I plan to
eat one sandwich(probably BBQ pork), coleslaw and a slice of coconut pie. I am figuring the meal will set me back about 1700-2000 calories. So...I am on track today and tomorrow.

I have this book from the library right now. One of the women in our dinner co-op (who is Mexican) used to make these sandwiches for dinner every now and then. She also added grilled steak… they are VERY yum Smiler. I made some for Super Bowl Sunday (I think that I used chicken…).

I made a Mexican Sub Sandwich for dinner the other day, based on a Rick Bayless recipe.

The bottom sandwich layer was a cooked mash of pinto beans and ground spicy Mexican-type sausage. (Sometimes I use black beans.)

The next layer was a generous amount of goat cheese. (Sometimes I use pepper jack.)

The next layer was slices of avocado.

And to top the whole (insides) thing off, I used store bought roasted tomato - roasted garlic salsa.

Yum!Smiler

The recipe is in the book "Mexican Everday".


Goal: Stop stress snacking.

We went over to Orlando where the boyfriend's half-brother and sister-in-law and their children were vacationing. I was able to say, "No, thanks" to snacky foods that seem to appear with children on vacation, and be insistent enough of eating "well" that the boyfriend & I made a point of stopping at Subway yesterday afternoon for lunch. They (the other family) ate big for breakfast and big for dinner, but ate snacks all day rather than lunch, and I was NOT going to do that.

We did a fair amount of walking, but not a ton, and I'm going to add 10 minutes to each cardio session this week and next to account for the alcohol this weekend that I wasn't counting on, but probably could have foreseen if I'd thought about it.

Did not do as well avoiding the snacks last night as I had planned. We were doing yard work until late, so I didn't have time for a real dinner. I had a tuna sandwich before we went, but it wasn't enough to keep me from munching. I did limit myself to one mango margarita. I also had eaten very clean up to the time of the party.

Will have to do better today at my brother's house. I think I'll take watermelon and salad stuff so that I have some choices, and then have like one burger. They buy their meat directly from a farm and I've had the burgers before (they actually gave us some), and it seems to be fairly lean ground beef. (Thankfully.)

We've been going from one thing to the next...
Out with friends to hear a band at an Irish pub Friday night, smaller dinner party at our house last night (I cooked so that was healthy), cookout at my parents today and a ball game tomorrow.

I've had a "clean" week leading up to this weekend with bumped up exercise but I'm definitely eating more than usual.

I attended my best friend's birthday cookout yesterday. I brought a healthy whole wheat pasta salad with lots of veggies and that was the only healthy thing on the menu (except, oddly, dessert!). I had a hot dog (without bun because, after the first 2 bites, the bun fell apart and was not worth the calories anyway, so I left it on the plate) and half a small burger (no bun), and a little bit of cole slaw, potato salad and a bigger portion of my pasta salad. Dessert was homemade angel food cake with strawberries and Cool Whip.

We always go to a Native American Indian Pow Wow during Memorial Day Weekend (& again in October).

We have been going to this one twice a year for over 20 years Big Grin.

That is where we went today and boy am I beat. I walked & walked and walked. I bought a scarf, a t-shirt, 3 pairs of kokopelli earings and one kokopelli pendant which matches one of the pairs of earings.
I also bought a necklace made with some kind of pink stones for dd's birthday in two weeks and a pair of ladybug earrings for her also.

I had planned to have a buffalo burger for lunch but that vendor was not there this year so I ended up having a hot dog that had been wrapped in indian fry bread & deep fried. It was not bad but it was not great either. I should have gotten the indian taco instead.

Tomorrow dd is going to a movie with a group of folks. I am really glad she has met them because I just do not enjoy the movie theatre experience any more. Now I don't have to go with her. While she is at the movie I plan to go walking at the Y.

On Monday we will probably go back to the Pow Wow.

My uncle came into town (from Texas) for the race tomorrow. I invited him and my mom over for dinner.

I'm playing Monday AM at a city Memorial Day service.

I'm making ribs tomorrow (to eat on Monday). I've used this Alton Brown recipe many times.

I use less salt and instead of wine, use a bottle of beer for the brasing liquid. Instead of baby back ribs, I use boneless "country ribs"... as they are really cheap (they were on sale for 3.99/lb and then then got even cheaper at 1.99/lb).

I was also going to try them in a crock pot this time, instead of the oven being on all afternoon...
