Just an idea for those of you looking for an alternative to Chicken. Try Buffalo. It is much lower in fat than chicken. It is a little pricey, but hey, so are extra value meals. I like the buffalo burgers -- and so do my kids. They look forward to a "treat" and I look forward to teaching them healthy eating habits. Lisa

I ate buffalo until I went out to Custer State Park and saw them on the hoof. What beautiful creatures they are....now I can't touch it. It seems to be a sacred thing to me. But lean it is....don't cook it too long, tough as shoe leather otherwise.


It's never too late to get it right.

We love buffalo, but it is hard to find. There is an Ostrich rancher in our old town, but you can't buy directly from him, you have to go through his retail outlets which are VERY expensive! We really do love buffalo, and my kids thought it was cool that they were eating buffalo!!!! They also really thought it was cool when we had ostrich...they really enjoyed that too!

I recently made buffalo sausages with peppers and onion. The flavor was great and it is VERY lean. Unfortunately dd will not eat it.

We often use ground buffalo in KD's BBQ Burgers. As for getting others to try it. We just don't tell them it is not beef. Dena's college roommates never knew the difference.

Ostrich makes a really good alternative to beef - very similar in taste but way less fat and calories.

Thanks for the buffalo suggestion. I think that my family might go for the it as an alternative to beef... sort of like the Wild West burger...
