OK! the first part of this post is for a “normal” dinner and the second part is to turn it into a healthy Halloween dinner (and not for the squeamish).
Moo Shu-like Vegetables - 4 servings
4 cups of shredded napa cabbage 4 cups of matchstick cut carrots (or if you are lazy, I mean economical with your time, you can put the cabbage and carrots and whirl them in the food processor. They won’t look “right” but taste fine.)
“Some” wood-ear mushrooms - you’ll have to soak in hot water for an hour. (I didn’t have time to soak and left them out… and that is why I don’t know how much to use. I've used them before and they are good in moo shu.) Cut them into strips.
3-4 beaten eggs or Egg Beaters
¼ c. dry sherry

Sauce - mix in a bowl ¼ - 1/2 c. Hoisin Sauce (a serving size is 2 TBS (4 servings would be ½ cup)… and supplies 40% of your sodium … so I used less) ¼ c. plum jam ¼ c. rice vinegar ¼ tsp sesame oil ¼ tsp of Hunan chili sauce (I like it a little spicy…)

1. Heat a good sized non stick pan with 1 tsp of peanut oil Cook the egg like scrambled eggs. Chop up into one inch pieces with spatula as it is cooking and put on a plate when it is done.
2. Add a little more peanut oil into same pan and heat. Add carrots and mushrooms and cook a couple mins. and then add cabbage and cook until soft but still crunchy. Throw the sherry in the pan with the vegs and cook 30 secs. to burn of the alcohol.
3. Turn off the heat and add the egg pieces and the sauce and mix serve with rice or in a tortilla for a wrap. I’ve made the Chinese pancakes… but it is some work and tortillas work. ******************************************** Halloween Morph
Buy purple cabbage instead of Napa Cabbage. The blue pigment in the cabbage will mix with the yellow pigment in the egg and turn the egg green.
You have two choices… you can add some smoked ham and call it “Green Eggs and Ham” moo shu
Or a more yucky option… If pieces of egg are about the size of your finger nail… they look an awful lot like boogers. I suppose you should serve it in a tortilla and call it a “Booger Wrap”.
* * * * * * * Only a SHE could come up with this recipe. Part of the DASH plan is that 2 cups of vegs should be “green leafy”. I’m in the grocery store and and think, "cabbage is green and leafy", so I buy the purple cabbage… and it occurs to me about 2 days later - that purple cabbage is not green.
The purple cabbage does taste different than the Napa… the “moo shu” ends up tasting like some bizarre fusion kind of thing. Sort of like “Dannish Cabbage meets Chinese Moo Shu in a Mexican tortilla”. But it is still good… and I had it for lunch 3 days in a row.
I thought it was good cold, too... but it did look a lot like boogers...

You crack me up so hard!! I'm sitting here reading this on the couch and laughing aloud. My fiance was giving me one of those "are you losing it" looks so I read it to him. We both shared a laugh.
