A few days ago I received a squash as a present from a friend. I have NO idea what kind - it's oval, big (weighs 2 lbs) and light green on the outside and I assume it will behave like a normal zucchini would when cooked/prepared.
I'm toying with the idea of cutting it in half, emptying most of it and filling it with something else, but other suggestions are most welcome.
What would you do?

Kathleen has a summer squash frittata recipe on her recipes page under Eggs. It's a great summer dinner with a salad on the side -- doesn't heat up the kitchen too much.

You could also slice into rounds, and slice vidalia or another sweet onion with it, add a couple of garlic cloves, and wrap in foil lightly coated with EVOO (or some other oil. Just so it doesn't stick), and roast on the grill.

OMG--- last night I made zucchini based pizza crust. It was great. I grated 2 zucchini, salted them and drained of excess water. I mixed with about 1/4 C white flour and 1 egg white. Flatten into pizza crust looking shape on Silpat. Bake at 450 until almost crisp. Remove from oven-- add toppings. Bake til done. Delish!
