I made chicken salad today, and was wondering if it sounded ok to you all??

Diced boiled chicken breasts (boneless,skinless)
celery
green onion
fresh parsley
fresh chives
pineapple tidbits in unsweetened pineapple juice
red seedless grapes, halved
chopped walnuts
non fat yogurt (instead of mayo)

does that sound friendly to you all? I love this with whole wheat crackers! My favorite lunch!

Thanks. I have a small amount of fruit in there. More grapes than pineapple. I thought that it was alright....I do eat whole grains. I love the whole grains and not the white stuff. However...the white taters will pose a problem. I thought I was doing ok as long as I roasted them and not doused them with fattening stuff. I mean, I knew that they were high glycemic, but in moderation. Our main veggies here are green beans and potatoes (hubby is soooooo picky!). That will change now. Thanks for the input! I will call around for a dietician tomorrow and see what it will cost. My hubby is very adamnant about this budget, and it may not be possible this month. **sigh** Oh well! I went to the Library and checked out the New Sugar Busters! So far it is VERY interesting reading!

I also watch glycemic index with my foods due to a medical condition. The pinneapple and grapes alone might present a problem (depends upon qualatity) but with the chicken, nuts and all I am not sure how it would shift blood sugars.

I generally try to keep my grains whole and make sure that I eat them with a protein/fat source. Your salad seems to fit the bill. My dietician explained that when you create a balance (as in your salad) that blood sugars are much more stable. Seems to me that you are doing a great job.

Have you talked with a professional about some of these foods. A 1-2 session committment might be really helpful.

Sounds yummy. FYI, pineapple is one of the most sugary fruits. I checked the glycemic index of fruits and pineapple was the second highest (most sugary) of all the fruits listed (watermelon was first).
