Okay...here's Friday's homework.

List one or more recipe(s) that you have tried within the past 6 months which has/will become incorporated into your menus on a fairly regular basis. Posting the recipe is not necessary unless you want too.

2. Zucchini Mushroom Saute from Spark People Website


Summer Se7en Challenge Goals


1. Binge control: no more than 2 times per week
2. Think positive and give credit for all the little successes

Last night I made Mexican Skillet Dinner for the 4th time since I discovered it. Super easy and really tasty.

1lb Ground beef or ground turkey

Brown this up and drain if necessary.

Add 2 minced garlic cloves, 1 2/3 cup broth(beef or chicken), a can of mexican style tomatoes crushed or diced, 1 3/4 cup uncooked elbow macaroni, 2 1/2 cups thawed frozen corn, 1T Chili Powder, 1/2 t oregano, salt and pepper to taste.

Bring to a boil and then reduce to simmer. Cover and cook for 10 minutes or until the pasta is done.

At the end I like to add a half a cup of recuded fat shredded cheddar.

This recipe serves 6.

I have added chopped hot banana peppers or jalepenos, and shallots. Both are good additions. I am sure you could add a can of black beans to stretch it out if you wanted.

Last time I added some cumin and some chipotle powder. Very Tasty.

Well, I really REALLY try to get through leftovers. This week for instance I opened a can of chick peas for a salad...we had some green beans left over from a dinner.

BOOM I just put some EVOO, Salt and Pepper and little oregano. It is a little side salad with lunch.

So, I just try to look at what I have that I certainly do not want to throw out. Then I think about what I can do with it.

Another one I have done---anyone seen those cocktail mini slices of bread. RR actually has had them on some of her shows. Well, I bought some of the low fat spreadable cheese (blanking on the name right now) and toasted those little breads up...it is a nice little breakfast for me. This morning i did with PB and had a nice glass of milk. (If you do decide to do this...be aware there quite a few slices in one package so you should put them in a freezer bag after opening and keep in the fridge.)

You'll definitely use that loaf pan a lot. The banana bread is so quick and easy, I have the recipe practically memorized. I really like the cookie recipes, too. What I haven't tried are any of the cakes that you're supposed to make in cans. Saving that for when I feel really ambitious.

i am a huge falafel fan! i was going thru a period where i had one for breakfast every morning. i always think it's shame when people won't give it a try because it has a foreign name. foreign can be totally yummy!


Goals:
1. Stop thinking like a chronic dieter and start living to inspire.
2. HALT (hungry, anxious, lonely, tired) I will stop and tune in with myself should I experience these things, and respond with something healthy.
3. One word 2008: courage
4. Eat slow and mindfully.

Muffins of all kinds. I have received a basic muffin recipe, and all you do is add the other ingredients you desire. It's a great way to get your family a little more vegetables or fruit.

We've had beet muffins, apple muffins, peach muffins, savory muffins. GREAT!


It's never too late to get it right.

I make chicken falafel burgers. My own creation. Wink

I hate the texture of almost every legume but like the flavor of falafel so I make a double batch of falafel, substituting 1 lb. ground chicken for half of the chick peas.

MMMMM... and you almost don't notice the beans. Smiler

Granola bars from Mayo book. I can make them 'gluten and casein' free which is good for our whole family...a rarity.

Seafood stew modified from Low Fat Cooking is my new winter favorite. I posted the recipe last month under the recipe thread.

I made it again on Christmas Eve to rave reviews from picky critics - my parents ; )

I make the banana bread and the sweet potato bread from the Small Batch Baking cookbook on an almost weekly basis now. Either one is just enough for a little dessert in the evening or a little breakfast. Notice I said "or" not "and." DH and DS really like these breads!
