When a salad dressing calls for EVOO and Garlic in the ingredants and if I want to make for more then one serving (ie: to make a bottle of it) is it o.k
The reason I am asking I thought a while ago I read somewhere (but could be wrong) the combination of the 2 is dangorus.
Can someone please clarify this for me....
Thanks

I make a homemade salad dressing constantly. It's the only salad dressing that I use. I use dried garlic in it, and have never had a problem. The garlic reconstitutes after a few hours and adds lots of flavor. Because it's a vinegar & oil based dressing (I usually use canola), I've never stored it in the fridge. There's nothing in it that needs refrigerated. Plus, I use it so fast that it rarely sits for more than 7 days.

Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.
I remember hearing something like that in regards to making flavored oils. I don't think they are dangerous in the short term if stored properly. How long will a bottle of dressing last you? I think I have heard something about garlic spoiling if it is stored too long in oil but that may have been unrefrigerated.
