Hey guys,
I want to make the Salmon in Lemon and Soy Broth w/Skiitake Mushrooms out of the blue book. I don't care for mushrooms though. I was hoping for some suggestions on what I might substitute for those. I was thinking red bell pepper but was concerned that might overwhelm the other flavors. I'm drawing a big 'ole blank. Worst case, I'll just use the marinade and make some sort of side veggie instead of making the rest of the recipe but thought I'd see what you guys thought.

Thanks all! I like the idea of the zucchini in particular. I wound up making the salmon in the yellow book w/the cucumbers instead. It was YUUUUMMMMYY! Smiler I do still want to make this one from the blue book though and I still have salmon in the freezer.

I don't like mushrooms either. With me it is a texture thing. I don't mind the flavor but I don't like to get one in my mouth Eeker.

Depending on how the mushrooms are used, I would probably use them in the recipe and then pick them out before eating it.

I don't know what to suggest as a substitute.

Swiss chard, asparagus, and spinach are my top 3 favorite veggies. Big Grin

Spinach or swiss chard would also be good.

zucchini combined with sliced onions--pretty mild mix.

Asparagus
Snow peas
Leeks
Broccoli

Mushrooms don't have a strong flavor. Try thinking of a veggie that doesn't have a strong flavor. Maybe asparagus?
