I like to steam three veggies together as a side dish. 1 cup chopped broccoli 1/2 cup chopped cauliflower 1 snack pack of baby carrots grated (in mini chopper) Salt and Pepper to taste Mix throughly with about 1/2 teaspoon olive oil and dump them into a really hot saucepan. Stir once or twice and add about 1/4 cup water. Clap a lid on the pan and turn the heat down. Cook until cauliflower is translucent stirring occasionally.
1. do 4 laps on walking track without "resting" 2. do 1 mile (17laps) in 20 minutes (3miles per hour)

Easy Southwest chicken 4 oz boneless skinless chicken breasts per person 1 can of black beans 1 jar of store bought salsa 1 package of pre-sliced mushrooms Rinse black beans and bring to boil with a couple of tablespoons of salsa. Reduce and simmer for 20 minutes. Mash with a potato masher for a "refried" texture. Place chicken in a baking dish and pour more salsa over it. Bake at 375 for 30 minutes depending on the thickness of the breast. Quickly saute sliced mushrooms in a non stick pan just before chicken is ready.

Does it have to be healthy? I make some KILLER 4 ingredient peanut butter cookies  1 cup brown sugar 1 cup peanut butter 1 egg 1 tsp. baking powder Mix all together, drop using a small scoop (mine is 1 T.) onto a parchment paper covered baking sheet. Bake for 10 minutes at 350 degrees. YUMM!  Probably NOT what you are looking for though  I do have some others....will think about it and post them in about 10 minutes--I need to eat right now
