Beans & Greens
-canned black or pinto beans
-steamed collard greens
-soy sauce
-hot sauce

Harvest Oatmeal
-Saute a diced pear or apple in 1 t butter
-Add 1 serving of quick cooking oats and vanilla almond milk (or lowfat dairy milk), cook until thick
-Drizzle with 1 T pure maple syrup

Instant Pasta Carbonara
-Cook pasta according to directions
-Saute imitation bacon bits in evoo
-Add a small amount of cooking water to plump bacon
-Add cooked pasta and toss with freshly grated parmesan cheese

Broccoli-Cheddar Potato
-Cook a russet potato in the microwave
-Steam fresh broccoli or cook frozen
-Bring 1 cup milk to a low boil and add 2 slices of fat free american cheese, whisk until melted

Pile o' German Food
-Tofurky brand vegetarian beer brats
-Canned or jarred sauerkraut
-Potatoes mashed with evoo and roasted garlic

Thai Salad
-Bagged american salad (iceberg, romaine, carrots)
-Chopped bell pepper
-Asian style baked tofu
-Peanut dressing (pb + rice vinegar)

Sneaky Veggie Pasta
-Saute grated carrot, grated zucchini and minced mushrooms in 1 T evoo
-jarred marinara
-cooked pasta

Homemade enchiladas
-corn tortillas
-enchilada sauce
-green chiles
-cheese
---Cook corn tortillas with fat free cooking spray, fill with green chiles and cheese, top with enchilada sauce and bake

Colorful Black Bean Stir Fry
-bag of stir fry veggies
-can of black beans
-frozen brown rice
-bottled teriyaki sauce

Quesadillas
-bagged baby spinach
-portabello mushrooms
-pepper jack cheese
-whole grain tortillas
---Saute mushrooms in evoo, add spinach to wilt slightly. Fill quesadillas and bake or grill until cheese is melted

How to make a veggie burger taste great
-top your favorite veggie burger (grilled preferably) with a smear of boursin cheese and a pile of fresh, crisp spinach and sliced tomatoes
-serve on a whole grain bun

LOL Denise!!! Hey, I'm all for the 1 pot, 3 0r 4 ingredient dishes!!!!

As far as the self-rising corn meal, I really don't know but Surely you can find it somewhere near you. It is VERY common here, the only kind I ever buy. I don't know if it is just a "southern" thing or not.....Sort of will be interesting to find out. Smiler

Chile Verde (green) (or red... rojo? roja?) Serves 16
Put in a crock pot

A 3 pound chunk of meat (I usually use a pork loin - but I've used some kind of lean beef - a friend has used chick breasts… but don’t cook them to death)

32 oz bottle of green salsa... or your favorite salsa... I've used chipotle... But I like Trader Joes brand of green salsa. (Buy a second smaller jar of salsa.)

Plus enough water to just barely cover the meat.

Cook until the meat is shreddable or until you are home to shred it... 5 - 7 hours... depending on your crock... something like that...

Shred the meat and add back to the pot and add 3-4 cans of drained/rinsed beans and heat.

Serve on rice or tortillas with nf/lf sour cream (and avocados and other things that are more than 3 ingredients...) The cooked salsa isn't very spicy hot... so you might want to buy a smaller jar for topping when you eat it.

Scambled Breakfast Wrap

1 Whole Wheat tortilla shell
1 or 2 eggs, scrambled
Lowfat cheddar cheese to taste
Salsa to taste

Scamble eggs, put on tortilla. Top w/cheese & salsa. Wrap it up. Eat and enjoy! Smiler

Something sort of like Spanish Rice

1 cup brown rice
2 1/4 cups water
1 can Ro-Tel brand tomaoes
1 heaping tsp cumin

Place ingredients in a microwavable dish w/cover. Microwave on HIGH setting for 5 minutes. Reduce setting to 50% power and microwave for 40 - 45 more minutes. Let stand for 5 minutes. Stir before serving.
I've made the Spanish rice with brown rice, 1 can Rotel tomatoes, a heaping tsp of cumin and 2 or 3 (or more ) dashes of cayenne pepper.

**Note: Add salt to the rice before cooking if you wish but remember that the Ro-tel tomatoes contain sodium.

The "I have absolutely no idea what this is called, but it sure is good" one-pot supper Smiler

1 small (or 1/2 large) head of green cabbage, chopped
1 onion, thinly sliced
2 medium potatoes, sliced and/or 3 medium carrots sliced
1 pkg low-fat (or turkey) polish sausage, sliced
Cajun seasoning
Water just to cover the cabbage layer

In a large stockpot, layer cabbage first, then onion, any other veggies you would like to add and polish sausage on top. Generously sprinkle with cajun seasoning and add water just to the top of the cabbage layer. COVER and Cook on medium-high heat for about 20 min.

**Note: I have also used summer squash in this instead of potatoes and it was really yummy!! You could probably use almost any veggie you like such as peppers, cauliflower or whatever.

I also like to serve this with a fat-free cornbread but you don't have to.

Oh!!!! Fat-Free (or almost fat-free cornbread)

1 egg, beaten (or egg sub. equivalent)
1 1/4 cups self-rising cornmeal
1 cup fat-free buttermilk (add just a little at a time until you get a nice thick but pourable consistancy)
cooking spray

Lightly spray an 8 or 9" iron skillet. Place the skillet in your oven and preheat it to 450 degrees....Your skillet should be HOT when you pour the batter into it, you should hear a sizzle. Bake for about 20 minutes.

Pasta Salad
Whole Wheat egg noodle pasta cooked, drained and cooled. Add fat free feta cheese, pinenuts, veggies (tomatoes and spinach are my choice) and Gerardi's Light Champagne Dressing. Sooo easy and scrumptious!

Cola Chicken
1 can diet coke (flavored is good too)
1 cup ketchup
4 chicken breasts

-put in fry pan, cover and cook on low about 40 minutes.
-Remove chicken and bring to a boil and sauce thickens (about 15 minutes)
-Sounds weird, but is delicious!

1 cup rinsed quioa
2 cups water + 1 chicken stock cube OR 2 c. chicken stock

"some" poultry seasoning - (like 1/2 - 1 TBS)

chopped up 1/2 onion and 1-2 celery stalks (whirl in a food proc.).

Add everything to a covered pot, bring to a boil and simmer for 10-15 mins until quioa is done. (probably tastier if the onion/celery is sauted first - depends on how lazy I'm feeling...)

Good side for chicken... the flavor of stove top stuffing but healthier.

The easiest homemade veggie soup around...

1 Large can tomato juice
1 bag frozen mixed soup vegetables
Olive oil (optional), salt & pepper to taste
1 crockpot (also optional)

Simply dump ingredients into a crockpot (or stove-top soup pot) and cook until veggies are done. For stove-top I would say about 40 min. give or take and for the crockpot, simply set on low & let it cook all day.

My best friend makes this at least once a week and it is always fantastic.

Ingredients:
Miso
Mirin
White fish

Mix parts miso and mirin until you have a creamy soup consistency. Pour over the fish. Bake.
Just talked with my friend. Apparently the recipe has already been on t.v. Gwyneth Paltrow made it on Oprah. But, it is still a good recipe for use by the online members of this site. I really recommend it.

Smiler My favorite breakfast is Scrambled egg with spinach, sundried tomato and pecorino romano cheese grated in. I scramble a couple of eggs, or I use a cup of egg beaters. I pour it into a hot non stick pan and throw on some grated cheese, some sundried tomatoes (the kind julienned and packed in olive oil) and some baby spinach. It takes like a minute to cook and there is my yummy breakfast. Every now and then I top it with a tsp of bacon bits.

How about pumpkin soup:

Use canned (or puree your own) pumpkin, add milk, a little nutmeg, salt and pepper. (I sometimes add a little balsamic and brown sugar-

P.S. You could do this with squash puree too.

I like rice bowls- a great winter, fall comfort food.
We use:
rice (white or brown- I prefer white)
broc
parm cheese (or cheddar)

The options are endless...any veggies your family likes...

One of my favorite 3-4 ingred breakfast is the mock muffin... or egg sandwich

scramble 1 egg, crumble in 1 slice lean bacon, between two slices of toast.

I usually eat it for lunch, tho...

Sort-of-Sushi-Like Lunch for One

3 ingredient sauce (mix together)
1 tsp Lite sodium soy sauce
1 TBS of rice wine vinegar
1/4 tsp wasabi

pour over 1/2 cup rice and leftover salmon (or chicken) and vegs.

(My apologies to Miho for butchering the cuisine of her native Japan.)
