Well, if I'm back (hi y'all!), I might as well start here....
Migas (Mee-gahs)
A Tex-Mex dish, basically made from leftovers. -Tortillas -Eggs -Other Stuff (some things we've liked: drained can of Ro-Tel tomatoes; drained & rinsed black/kidney/red beans; potato, either shredded or chopped small; onions & green peppers)
Cut tortillas (any kind--whole wheat, corn, flour--one per person you're feeding) into small squares (1/2 inch-a pizza cutter's great for this) and toss them in a skillet, either with a pat of butter or non-stick spray. Cook them on medium until they get a teensy bit crispy.
Then add your "other stuff". My favorite is a can of (drained) Ro-Tel tomatoes and/or drained, rinsed black beans. Put 'em in with the tortillas, and break eggs (2 per person) in a separate dish while they heat up. Add your eggs, and let everything cook a couple of minutes. Serve with a little cheese or sour cream on the top, if you're feeling ambitious.
If you leave tomatoes out, it's a very pretty dish. The tomatoes get kinda bleedy and turn the eggs a lovely shade of yellow-pink. Fresh tomatoes don't bleed as much as canned ones.

I have an easy yummy one that even my picky picky husband will eat.
1 cup couscous cooked in 1 cup chicken broth once done, add a can of pineapple chunks, cooked chicken, parsley (that shouldn't count as an ingredient) and sometimes some chopped walnuts. Super fast and good.

Ginger-Lime-Garlic Mahi Mahi (on George Foreman Grill)
Heat up grill.
Grate or chop about 1/2 tsp. each of fresh ginger and garlic into a shallow dish or pan, and squeeze a lime on top. Stir to combine.
Dip mahi mahi fillet in mixture and season with salt and pepper if desired. Flip to coat both sides. Grill for 3 to 4 minutes (if using a regular pan or grill, you may have to cook longer) or until fish flakes with fork.

1 frozen banana, broken into pieces 1-2 T cocoa powder (to taste) ~1 c milk
dump everything into a blender or use an immersion blender. the less milk used, the more milkshake-ish this tastes. using the frozen banana makes this sweet and creamy without adding any ice cream, sugar or ice.

This recipe sounds kind of fishy... but it was AWESOME! I didn’t want to use soy sauce and thought that anchovies are salty and rich.
For one person
1 frozen boneless/skinless tilapia filet (or any frozen fish about ½” thick) ½ to 1 anchovy filet (I used 1 and it was salty, but yummy) 1/4-1/2 cup dry white wine
Use a nonstick pan big enough to hold the fish. Put 1 tsp of olive oil in a nonstick pan on med to med-hi. Add the anchovy and mash with a fork. The anchovy will kind of melt. The bones will cook away.
Put the anchovy/oil in a cup with 2 TBS of white wine. Mix with the fork.
Rinse out the pan with water… don’t wash… just rinse. Put it back on the stove and turn the heat up to Med-high-plus. You want it a little higher than med high… but not on full blast.
When the pan is hot (throw a few drops of water in the pan to see if they sizzle) put a FROZEN tilapia filet in the pan and pour the olive oil/anchovy/wine mixture over the filet. Set timer for 3 mins. Don’t turn, move or play with the fish.
Turn the fish over after 3 mins. And cook on the other side for 3 mins.
The fish should be brown on the outside and perfectly cooked on the inside… Check the thickest part of the fish. It may need 30 seconds or 1 min more.
Deglaze the pan with 2-4 TBS of wine and put on top of the fish.
mix in a bowl: 1/3 C. egg beaters or egg white or egg 1 heaping soup spoon of salsa 1/2 - 1 crumbled slice of cooked bacon (optional 1/2 c. cooked beans - pintos, black, lentils)
Cook in a non-stick pan on med hi with 1 tsp of olive oil
Serve in a tortilla or over rice with more salsa, non-fat sour cream, avocado and/or what ever else you put on your burritos/tacos/etc.
PS... when I make brown rice, I freeze individual portions in plastic sandwich bags and then I put the bags in a freezer size zip lock (photo). Remove the rice from the bag to defrost. It takes 90 seconds to defrost one serving if you defrost just rice. If you try and defrost the rice with other food... it takes considerably longer.

1 whole wheat tortilla 1/2 apple, cored and sliced thinly 1/2 oz. feta cheese
On my cast iron griddle I heated up the whole wheat tortilla on one side, then flipped it over and arranged the apple slices on one half, and the feta cheese over that. Fold tortilla in half and let both side of tortilla crisp and cheese melt. Cut into strips. Enjoy!

D'oh! You're right. My brain took the "3" in the first line of kd's message and the "October" in the second line and put them together...I read it as October 3 vs. Tuesday. Ah well.

As a matter of fact, I did get bumped! But they will have us back on this month. I'm not sure the reason but that's the nature of TV. kd, did you get bumped or did I miss it? I went out for my powerwalk during Today Show but set the tape...didn't see you on the tape when I returned, but I see that Prez. Bush announced his latest Supreme Court Justice nomination so I figured that may have bumped you.
