Just a few more ideas...
Namaste makes a very good pancake

Sweet potatoes. You can just cook them in mirco or make a soup.

any veg soup puree... potato, squash etc..

tomato sauce on spagetti squash.

that shepherd's pie idea from cate would be a good one- mashed potato top... YOu can make the night before or earlier in the day and then pop it in the oven

smoothies?

ensure??? My grandma eats lots of treats but gets most of her vitamins from ensure. Don't know if it is gluten free but there are many 'medical food' products out there. I"m doing a shake 1 or 2 X a day called "inflamx" I mix w/ frozen fruit and bannanas and water. At first I didn't like it but it grows on you and now I love it. Plus it is full of vitamins and good for your gut stuff. You have to ask the dr on that though. (And it's super expensive if you do 2X a day.) It IS gluten free

Jax Peters Lowell has a fantastic book on gluten-free lifestyles. She did reccomend some stuff I detested though.

There are asian bean noodles and rice noodles which are gluten-free and work well in soup.

The Namaste Foods Pizza crust is excellent.

Hydrolyzed Soy Protein often has wheat in it.

For soft, easy-chew foods, how about mashed potatoes? Or Shepherd's Pie. Polenta/grits.
Rice Pudding.

What are some of his favorite foods?

You could make ANY soup...and do rice vs. noodles. So instead of ckn noodle soup w. noodles do rice. I put a bunch of ckn thighs in the crockpot..added celery, carrots and broth (and I think some onions) and cooked it all day. Then took some of that pre-cooked frozen brown rice and tossed it in at the end....there are also other non gluten pasta products but one thought comes to mind...at the age of 90 do and this gut stuff going on you might not want to introduce NEW products (like quiona flour)

There is tons of non-iodized salt in it....i do by the regular stuff but only for 'science experiments' because it's cheap.

There is a good gluten free yahoo group for recipes but I'd recommend checking the messages online vs. getting them because there at TONS...like hundreds a day- but they have a recipe file.

Ckn and veggies would be a good way to go...

First off, I'm glad your fil has stabilized and is able to come home. That's great news!

My sil has Celiac's and her biggest problem isn't cooking from scratch, it's pre-packaged foods. Modified food starch is in tons of stuff and is not gf so you'll need to start reading labels. Have your fil referred to a nutritionist/rd to get a list of what he can and can't have.

There are all kinds of gf products on the market now that are widely available - gf pastas and breads are a maintain stay for my sil.

Meats, fish, veggies, rice and potatoes and fruits are also safe. Just be careful what you add to them.

I would start with looking at what your fil liked before and start tweaking them.

As SAHM posted, you can find gf breadcrumbs, gf flour, etc.... You'll have to do more label reading and searching but you'll find them.

If for some reason you are struggling finding gf stuff in your area, you can also order stuff on line at glutenfreemall.com

Okay here's the other monkey wrenches in this whole process... Bob's dad is 90.... so I don't think we'll be feeding him chili anytime soon. Bob would not want to suffer through the consequences. He also can't have iodized salt because the Duhrings reacts with it. We've also been on the search for gluten free household cleaning/personal hygiene products since his skin involved. It's been interesting.

Bob is just looking for some simple basic foods his dad can have and that are easy to chew and digest. I gave him a pile of recipes last night but we are definitely taking a whole foods approach to this.

corn bread and chili..oh wait.. you live in TX so that might not be all that desirable....

just do ANY meat, fish, ckn, w/ veggie and rice.

What a GREAT topic! (although I am sorry for the circumstances!!!!!!) I will get the books out in the next few days and see what i may have done. I did just buy 2 new allergy cookbooks: Whole Foods Allergy Cookbook (Cybele Pascal) and The Allergy Self Help Cookbook (Jones.) The first one was chock full of great healthy recipes. Also- I have tended to shy away from the grains anyway (except rice) since doing GF (and other allergies as well.) I'd love to brainstorm some more....

by the way- check out the library for allergy cookbooks. Ours had TONS.

ps: i have leaky gut...thus all the allergyn free stuff....
