I need ideas for dinner tonight. I have several pieces of bbq chicken that are left from dinner last night and from Monday night. I have 2 chicken breasts (boneless/skinless) and 3 thighs. Altogether it is enough for anything for dinner, but I really don't have a clue what to do with it? I have 1 non-salad eater (he doesn't like condiments AT ALL (won't eat mayo, mustard, ketchup, salad dressing, etc, etc, etc.....he eats all of his foods "dry"), and he isn't up to trying lettuce without anything on it after he sees everyone else putting dressing on it (because after all, if you are putting something on it, it must not taste good by itself, right?)). anyhow, he won't eat salad, so doing a bbq chicken or buffalo chicken salad won't work.
I do have ww couscous, pastas of different types, and a plethora of veggies, in the house. Any suggestions?

well, somehow, I was out of yeast, so I ended up making a VERY YUMMY pasta salad with it. Here's what I did....
1 1/2 pounds ww pasta (So that there would be plenty for lunches the next couple of days) 20 ounces shredded bbq chicken 3 roma tomatoes (diced) 4 green onions (thinly sliced) 2 zucchini, diced 1 carrot, grated 1 avocado, diced 1/2 cup chopped cauliflower (leftover from last night's dinner 1/4 cup rice vinegar mixed with 3/4 cup bbq sauce salt and pepper to taste
I mixed it all in a HUGE bowl, and served it with watermelon....YUMMMMMMM and perfect for a very hot summer day.....my family really enjoyed it and appreciated not coming into a hot kitchen

The wraps sounded good, the pasta salad sounded ok, but this sounds delightful! I'm going to go start the dough right now! Thanks Francie and Kathleen for the idea! I have green onions, red bell peppers and cilantro....all things I like in my bbq chicken pizza
And I'll "grill" them, so that I don't have to heat up my kitchen with the oven (it's HOT here)

BBQ Chicken PIZZA!!! Or BBQ chicken sandwiches or wraps. Mix chicken with bottled bbq sauce, pour on pizza dough, sprinkle with cheese. Bake. Add chopped cilantro just before serving. YUM!
How about a BBQ chicken pizza? You could use homemade pizza crust or tortillas. The kids could add their own veggie toppings. You could also use buns or crusty bread for a crust if you are not up to making crust from scratch.
You could also go the bruscetta route and skip the cheese. Toast up your bread, top with some chicken and some flavorful sauteed veggies.
Do the wraps...sounds excellent! They get vegies and don't even know it! And how about fruit or jello for dessert....hmmm. What time did you say dinner was?
