These peanut butter truffles are nutrient rich and really hit the spot when you’re in need of a pick me up. They take about 10 minutes to whip up and require no cooking!

To prepare; in a food processor combine 1/2 cup creamy peanut butter, 1/2 cup non-fat dry milk powder, 1/4 cup wheat germ, 1/4 cup Old fashioned oats and 2 teaspoons of honey. Pulse or mix until thoroughly combined. Roll into a snack and make 16 slices (truffles). Roll each slice into a round ball and serve. So you’re not tempted to eat too many, wrap them individually. They will keep one week refrigerated and up to a month frozen.

Note: Make yourself drag out the food processor, they come together better. When you make them in an electric mixer they're drier and you'll need to add more honey.

You can use chunky peanut butter but creamy seems to work better.

My mom made these for us while we were growing up, we called them no bake cookies or peanut butter balls. She would roll them in coconut if she was serving them to our friends.

Something else that is really yummy in these is finely chopped dates. YUMMY! Reminds me of being a kid again! Smiler

Sheri - you should try wheat germ in other stuff. It is delicious. You can add it to smoothies, oatmeal, cereal. You can get creative with it. Have fun!

Hi,

Well hubby and my oldest son went to a hockey game. Made these with my youngest son. I should have used a little more honey like Alli posted because I used natural peanut butter too and mixture seem a bit hard to work with. None the less I was able to make 16 truffles but before I could wrap them individually my son had ate two and said "Not Bad... Tasty"!! So I too tried just one and they are Yummy and will satisfy this Mom's stress sweet binges. Wink.

Picked up my wheat germ today while in Whole Foods. It came in a jar and it WAS right next to the oatmeal as several of you suggested.

Thanks! It will probably be next weekend before I get 'round to trying the truffles. I just finished making my lunches for the week and I'm exhausted (long day!).


Rest of Summer Goals:
1. Exercise-Cardio: Min. 2-3 walking or DVD cardio workouts per week.
2. Exercise-Weights/Toning: Min. 1 weight plus 1 toning workout per week.
3. Food: Get those veggie servings back up to where they were!
4. Behavior: Start reducing sweets now that the automatic after-meal response is better.

Mmmm...Buckeyes!! My SIL makes killer Buckeyes. Luckily, she lives in Indiana and I live in Virginia. LOL! But when I go to Ohio for family reunion in August, I may just have to have one.

These sound really good. Next time I'm craving fat/sweet, I'll try these.

SheriaVa - I purchase wheat germ in a bag that suggests being stored in the fridge after opening. I found it in the natural foods aisle at one grocery store and the oatmeal aisle in another. Powdered milk is usually with the canned milk. Sometimes this is in the baking aisle and sometimes it's with coffee/tea.

Being an Ohio girl, I would be tempted to dip these in chocolate buckeye-style....

I love peanut butter so I'll have to give them a try.

Alli, The satisfaction and not feeling like you need to eat more than one is VERY good news (to me)!

I made these today. They're great! Just sweet enough to curb a craving, and thick enough that you wont' eat more than one.

I did need to use a lot more honey, though. I used a natural peanut butter, and with only 2 tsp of honey the mixture was too dry to form balls. I added at least a tablespoon more before it reached a consistency I could work with.

Does anyone know how to make a yogurt coating for these? I was thinking about making a batch covered in vanilla yogurt (or white chocolate) to bring to the family Easter gathering instead of the ususal candy.

They're more on the healthy side than the candy side but they satisfy a sweet tooth in a responsible way. They're rich in all the right stuff. I love em!

I haven't bought wheat germ in years but... I've seen in jars. In the oatmeal isle of regular old grocery stores.

Might make before going skiing. Look too good!!! Too tempting. Wish we all lived in same city and we could make a batch and have one!

Darn! I have everything but the powdered milk and wheat germ.

Where do I find wheat germ? I've never bought it before. Would this be something I would find in the grain area at Whole Foods? Does it come in a bag, bottle, box or what?
