I'm looking for ideas for dinner tonight. I want to use my b/s chicken breasts and some farm fresh artichokes that I got yesterday. Anyone have any ideas or recipes they can send me? I have a pretty well stocked pantry (at least I think I do) as far as spices, and herbs are concerned. I do have some fresh dill also.

I ended up cutting the chicken breasts into strips, cutting the artichoke hearts into wedges. I put a couple of tablespoons of veggie stock in my nonstick skillet with 3 cloves of garlic, added the artichokes and squeezed the juice of 3 lemons and a grapefruit over it all. I added the chicken and sauteed it all until the artichokes were done (next time I'll steam them a little ahead of time, because the chicken got overcooked). If the pan started getting alittle dry, I'd add some more water. I boiled some whole wheat rotelle pasta. When the pasta was done, and the "sauce" was done, I added a tablespoon of butter and a teaaspoon of fresh thyme leaves to add flavor and "pop" to the sauce. I tossed the pasta in the pan with the chicken and artichokes mixture and it was SOOOOOOO good! I've made something similar with asparagus before....YUMMY!

Hey why not? Though I've never had fresh artichokes before, I would be willing to put a few in a taco salad to try it. From what we saw on the show, it looks like pretty much any fruit or vegetable is fair game.

Call me numb but what is "b/s chicken"? Well as for the chciken maybe you can make the Taco Salad with chicken KD promoted on the Today Show this morning. Like I stated on a previous thread the receipes plus a whole lote more are on the Today Show webpage under the Kitchen part or maybe it was under the sub heading of "A menu to help get the waistline you want".
