Hi: I;m figuring out the worst time of day for me regarding control is lunchtime. I work from home and by the time it's lunch I nibble and taste while I "decide" what to make and then make it.
Are there any tasty standby recipes you guys would recommend for soups, casseroles that would be good for lunch a few days in a row?
Any feedback would be great.
thanks! Pam

There are many of KD's recipes that I will sometimes make just for myself to eat for lunch for the week. I make a cobb salad and wrap it in tortillas, or her asian chicken noodle soup, or her thai shrimp thing with steamed bok choy. Most of her main dish salad recipes work well for this. You can always keep the dressing separate and add it just before eating.
Oh, and I also make her fried egg and green bean sandwich from the yellow cookbook. It is fast, warm, filling, and healthy. It also helps me to keep some slaws or veggie sides pre-made in the fridge. I use these with lunch or as snacks.
AFter you get all your good ideas for lunch, I have one for you. I never used to eat lunch until about 3:00, because like you I work at home, and have no sense of time when I am involved in a project. So when I would pack my kids' lunches, I'd make mine, put it in the frig and set the timer for lunch time. Just like the old school bell when the timer sounded, it was lunch time. I didn't have to thnk about what I was going to eat, it was there in my "lunch box" ready to be eaten. Worked great, now I am "sort of" in the habit of eating lunch on time.
It's never too late to get it right.

I keep homemade frozen meals on hand all the time. I have a variety of things, from jambalaya to soup, crab cakes, and a variety of burgers & sandwiches.
Some of my favorite soups come out of Giada deLaurentiis' cookbooks. I also make homemade veggie, chili, and a chicken & chorizo stoup from one of Rachael Ray's cookbooks.
I can just pull something out and reheat it. Lunch is done.
Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.
I find what works best for me is to make a plan at the beginning of the week, and eat that all week long.
This week it is going to be turkey sandwiches until Thursday. Then it will be leftovers.
Making soup or chili to munch on is a great idea. Any recipe good soup recipe would be great. One of my favorite healthy cookbooks these days is "The Best Kept Secrets of Healthy Eating" by Sandra Woodruff. There are some great soup recipes in there.
If you look in the organic section of the grocery store, there is a company that makes some nice soups in paper cartons. The corn chowder is my favorite. I usually add a handful of frozen corn, and a bit of canadian bacon to it while I am heating it up. The big cartons have 4? servings in them, so I can eat one, close it up and stash in the fridge until tomorrow.
My other trick is to make sure I always have easy grab and go veggies and fruit in the fridge. I really like the sugar snap peas. They come already prepped. I just grab a handful and drop them on my plate. I try to also have a piece of fruit with lunch.
Good Luck. --Francie
In today's homework thread I posted my "fried" rice recipe. It's a great easy lunch.
