I grilled salmon Sunday night. I need to eat it for dinner tonight. What would you do with leftover salmon? I also have some fresh asparagus that has been in the bottom of the fridge for 2 weeks! Any ideas?

Believe it or not, the asparagus was still just as crispy in the veggie drawer as it was the day I bought it 2 weeks ago! I snapped it and sauteed it with onion and added the salmon and teriyaki sauce. The rice is in the steamer. Thanks for the idea. This was the only idea I had the ingredients for, but I sure am glad. Its gonna be great!

just toss in a salad w/ the asparagus steamed...and toss on whatever else you have w/ some dressing. I do that w/ canned salmon all the time.... yum

Salmon cakes are great. I crumble mine up, add celery, green peppers, cukes, zuchini, any crunchy vegetables, a little mayo with twice as much plain yogurt, and put it in a tomato, or in fresh lettuce leaves as a stuffing. Serve with some melba toast,and fresh fruit. GREAT for hot nights when a cold dinner is just the thing you want.


It's never too late to get it right.

Put the salmon, fat-free cream cheese, and a bit of dijon mustard in the food processor & whirl 'til smooth. Mix in celery and chives for a salmon spread.


Challenge Goals:
*10 minutes of unplanned exercise five times a week
*Gym time twice a week
*Socialize at least once every two weeks.

Stir-fry the asparagus in teriyaki sauce (assuming it's still good and hasn't wilted) and, with a couple minutes left to go, flake up the salmon and mix it in, just so it gets heated through. Serve over rice.

Sautee the asparagus in a little olive oil and garlic. Add the salmon and a little fresh basil and season to taste. Then serve over angel-hair pasta.

Or make one of KD's frittatas (recipes on the recipe page under eggs) with the asparagus and have the salmon either on the side or in the frittata.
