I just had to tell you about my turkey meal that I made tonight. I took Coaster Girl's idea and revamped it.
DH claims he does not like ground turkey so I thought he might like this (he isn't home yet to try it...but I loved it).
I used ground turkey breast, 1 egg, 1/2 box of stuffing mix, and a little poultry seasoning. Formed them into "dip" patties to fit on a hoagie bun. Grilled them.
Made a "dip" out of fat free turkey gravy from a jar.
Used a nice french dip roll.
Made a green salad with dried cranberries and a sesame ginger dressing (want to find something more "Thanksgiving" like).
It was soooooo delicious. I loved having the dip and when dh wants his burger dip I can make this for me. Very filling and oh so tasty.

It's probably too late, Steph, but I put a recipe in the recipe exchange a while ago for 'Stuffed Spaghetti Squash" which is very easy, uses ground turkey (at least I do, is made in the microwave, so you don't have to heat the kitchen AND dh LOVES it! I don't actually stuff the squash. It's a casserole.
You could do some sort of mexican lasagne/ tamale pie type thing. I don't really have a recipe to offer. I would just brown up the meat and season it like you would for tacos, then layer it with veggies, cheese, and tortillas and bake it. Then you could top it with fresh lettuce and lf sour cream.
Also, you don't have to use the full amount of meat. You could freeze some of it or you could cook it all up and freeze the seasoned cooked meat to make quick nachos or taco salad another night.
This recipe for Turkey Chili is a total keeper. I make it with yellow hominy instead of the beans because that way my whole family loves it. The secret is the cocoa! It adds a layer of flavor that is wonderful. If you are careful about the amount of bacon and bacon fat you use, it's nice and lowfat.
I also love to make Asian Meat Loaf from the cooking light website, but I couldn't get the link to behave this morning. It calls for turkey and pork, but I use turkey straight or add a patty of ground beef. I love to make individual meatloafs (little oval mounds) and freeze the leftovers in zip locks for quick lunches. Think I'll do that today!

That's all I ever use.. Salsa Joe's...Ground Turkey, salsa, shredded cheese and whole wheat buns..
BBQ Meatloaf..1 lbs Ground Turkey, 1 Pkg of Low Sodium Chicken flavor Stuffing, 3 tbsp Favorite BBQ sauce, 1 Egg, 2/3 cup of water mix to gether and form into 2 football shape bake at 350 for 40-45 mins..5 mins before it's done put 2 tbsp of BBQ sauce on top of each meatloaf.Cook for 5 more mins then it's done..
It's great the next night, heated on the George Forman Grill for sandwiches..

I use ground turkey in anything and everything that I use ground beef in....tacos, taco salads, burritos, tostadas, sloppy joe's, burgers (we don't enjoy these quite as much), chili, chili spaghetti, spaghetti sauce, meatloaf, meatballs, etc, etc, etc.

turkey meatloaf is what I do...2 pds tky, box of stovetop chicken low sodium stuffing, 2 eggs, 1/4 cup of bbq sauce and 1 cup of milk mix altogether and form 2 loaves..bake on 350 for 45 minutes...you can add more bbq sauce as glaze...its good...I got the recipe here online

I make "thanksgiving burgers" with ground turkey, an egg, a couple of crumbled up corn muffins, and the traditional stuff that goes into cornbread stuffing...
poultry seasoning, sage, garlic, minced onion, garlic & celery, etc.
Hubby inhales them. I like 'em too. (Yeah, I'll admit, I have watched too much Rachael Ray. )
