Sometime today I am going to the grocery. I thought I would see what you all had as far as some meal ideas for this week.

Blackened salmon with steamed veggies in on the dinner list.
Turkey meatballs and a salad is too.

But, what are you all making that you are enjoying?

I don't have anything to share this week. Because I was in Delaware until yesterday morning and then had a mammogram as soon as I got back to Virginia, I didn't do any cooking yesterday. Instead, I am using leftover roast beef, carrots, potatoes and onions from my birthday dinner cooked by my Delware friends as my lunches this week, with a salad on the side.


Personal Healthy Habits Challenge - 10/1 to 12/31/08:
1. Exercise: Get back to consistently working out 3-5 X week.
2. Food: Get back to consistently preparing healthy lunches for the week with increased veg servings.
3. Behavior: Reduce intake of sweets.

I made chicken and dumplings this week. I use fat free broth, chicken breasts, fresh veggies and a whole wheat biscut mix for the dumplings. I also leave out the potatoes, since the dumplings are enough starch for one meal.

I'm thinking pot roast & noodles, spaghetti & meatballs, and grouper piccata.

I have been looking for heated up, heavier, heartier food since I spent the weekend shivering next to Lake Erie. Wink Roll Eyes


Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.

The week is going according to plan so far. The lightened up Alfredo sauce was pretty good. The WW pasta I bought was not good. I tried a different brand this time and won't try that one again.

Tonight's soup is already on the stove. I have a class during the dinner hour tonight, so I am making dinner early. Hooray for me

Here is my plan for the week.
Tonight-out.
Sunday Chicken Alfredo (lightened up,)Broccoli& Salad.
Monday White Bean and Pasta Soup, crusty bread, & Salad.
Tuesday Pot Roast, Veggies & Salad.
Wednesday Pork BBQ over Baked Potatos, Salad. This is a busy night. Pork is done and in the freezer.
Thursday Meatball Subs, Salad, Oven Fries?
Friday- probably out...

I would also like to make some bran muffins, and a batch of low fat cookies this week. I have been in a baking mood lately.

This past week I managed to cook in 5 nights in a row, which I think is a record for us. And my reward for this was losing a pound and a half. Obviously it works to cook at home. Now if I could just get the clean up fairy to come and visit after dinner each night...

I try to sit down one morning over the weekend and look through cookbooks and come up with a plan. This morning I wrote down 18 recipes that I wanted to try. I suppose if I took another half an hour I could plan out menus for two more weeks. But I am not sure if I want to "commit" that far ahead.

Good idea to plan ahead...beats OMG! What's for dinner.

Let's see at the J's house this week is

Sunday: Birthday Lasagna
Monday: soup and sandwiches
Tuesday: Fish pockets
Wedesday: soup (I am alone that night, anything easy)
Thursday: Chicken baked
Friday: Another easy night, probably salad with
chicken
Saturday: We are invited out


Hope that helps.....we don't eat fancy we just eat healthy

Monday - Shake and Bake chicken
Tue - I wrote down pork. I really don’t know what dinner will be… since all I wrote was “pork”
Wed - Shrimp Scampi Pasta

We are having a cold spell here right now so we will be cooking a huge pot of chili tonight. Hopefully I'll have some left over to freeze.

It's cold enough here (high in the low 40s) that I'm thinking soup! I've seen some pretty luscious recipes recently in addition to my favorite Tortellini Pesto which is unbelievably easy to make and gets raves whenever I make it (except from my guys).

Unfortunately, the frost came in and killed my not yet ripe spaghetti squash. I was looking forward to my first home grown squash. I put the recipe, long time ago, on the recipe swap for the "Stuffed Spaghetti Squash". Even Bill likes that one.

Noodle bowls of some type. I use chicken or pork and lots of veggies and stir-fry them in a teriyaki or sesame ginger sauce and then use Udon or Soba noodles.

Alek and I love these, DH hates it so I make it when he's not home.
