I'm going to a potluck tonight. I know that I am going to want dessert, but it isn't some fancy dinner that I want to splurge for dessert. I suspect that most of the desserts will be store bought...
I made this cake on Monday. It is really low in calories and came out REALLY well. It is like chocolate ginger bread. It is a little odd... uses a can of garbanzos instead of flour, but you literally could not tell - either taste or texture wise. It was very light.
I wouldn't make it for a really special holiday dinner like Xmas night... but if you celebrate both Xmas eve and Xmas night it would be a good light dessert with some whipped cream on the less formal night...
It was REALLY easy to make in the food proc.
Chocolate and Spice Chickpea Cake1 can garbanzo beans (or 1-1/2 c.)
1/4 c. juice (recipe calls for orange but I had apple and it worked fine)
3 large eggs, room temp
3/4 c. sugar
1/4 c. unsweetened cocoa powder
1/4 t. baking soda
1/2 t. baking powder
1/2 t. cinnamon
1/4 t. nutmeg
pinch cloves
Whirl beans and juice in a food processor until very smooth. I'd start with 1/3 of the can and add more gradually.
Add eggs one at a time.
Add cocoa and other dry ingreds.
Mix together in processor.
Pour batter into prepared 8X8" NON STICK pan. LINE THE PAN WITH PARCHMENT and oil the pan and the parchment (I skipped this step on Monday and the cake REALLY sticks. The cake broke into pieces and I had to throw it away because the cake was very good and it was terrible to be home alone with pieces of broken cake.

Bake 30-35 mins until a toothpick inserted in the center comes out clean.
