I really have to vent on a bunch of stuff, but am in no mood to write it all up now, mabe later in the day or over the w/e.
RE: the subject, if I want to have it for a complete meal for dinner, how much pasta do I cook up, and if more then 1/2c (the usual I think) do I do away with other starches during the day, like bread, corn, beans, and can I add beans and or corn to the pasta.
Do you understand what I am trying to ask

I aim for 6-8 whole grain (or just white, but I try for whole grain) "bread" servings per day...this includes rice, pasta, bread, cereal, etc. Some days I get more, some less, it all evens out at the end of the week!
As for pasta salad, I use whatever I have available....if I have corn, I use corn, if I have beans, I'll use beans, pasta salad in our house is usually used to use up all the veggies in the crisper drawer before grocery shopping...much like soup is during the winter months. And I always make a larger batch than I need because it is so good for leftovers. Dh likes to take it for lunch (and I'll sometimes add meat and cheese to it for his lunches instead of sending a sandwich).
Pasta is one of those things that I have a hard time controlling my portions of...1 cup of pasta just doesn't seem enough most of the time....pasta salad is not one of those times, unless it is the main course, then I usually will have two portions (2 cups of cooked pasta). There is so much veggies and whatnot in my pasta salad that I can actually eat a real portion and not be starving afterwards.
Have fun with your pasta salad!
Blessings,
Lori

Carole - If you are just cooking for yourself, I would suggest cooking half the bag of pasta. This is 4 servings. Add all your yummy veggies, keeping an eye on conservative portions of higher calorie protein items like meat, beans and any nuts or seeds. If it helps you be accountable, add 4 servings of those items to the pasta.
Then, you should have a big bowl of pasta salad that will last for 4 meals. Since you measured all the ingredients into the salad as 4 servings, you can just divide the big bowl into 4 containers.

Carole, I think it depends on your own needs and food plan. I eat 2 starches at each of my 3 meals. I am actually having a pasta and veggie salad for dinner tonight. I will have 1 c cooked pasta with lots of veggies and feta cheese. P.S. When I make pasta salad, I always make extra as it keeps well for a few days.
