Does anyone have a recipe for chicken Italian Sausage?
I had some really lean (raw) beef left over from a dinner. I spun it in the food proc and made ground beef. I thought maybe the texture wouldn't be right, but it was fine.
Thought I might try some food processor chicken sausage.
I'll look for the recipe later on (need to get off the computer right now) but I have done this. I did a google search for homemade italian sausage and used that. It was SOOOOOO good! I really really liked the sausage that I had made and used it in KDs broccoli rabe and sausage recipe. It was WONDERFUL!!!!!

I just throw in italian type spices, including red pepper flakes, fennel seed, salt, black pepper, oregano and finely minced garlic. Everything just goes in based on what mood I'm in. (The fennel seed really gives the sausage the italian flavor that seems to dominate every other italian sausage.)
Mix everything together in a pyrex or glass bowl and cover it with plastic wrap tightly. Let the mixture sit undisturbed for 48-72 hours. Then cook as you would any other sausage. (After the sitting for 48-72 hours, make sure that the sausage gets cooked that day. It will get slimy and yucky after that.)
